Satsebeli with tomatoes for the winter

Tomatoes – 5 pieces (large)
Garlic – 4 cloves
Ground red pepper – 1/4 teaspoon
Saffron – 1/4 teaspoon
Hops-suneli – 1 teaspoon
Fresh dill – 50 grams
Fresh cilantro – 50 grams
Salt and black pepper to taste
Preparation
1. Wash the tomatoes, cut them, pour over them with boiling water and peel them off.
2. Chop the tomatoes and place in a saucepan.
3. Wash cilantro and dill and set aside two sprigs.
4. Pour boiling water over the tomatoes so that it covers them 1 centimeter higher, add two sprigs of cilantro and dill and cook over low heat for 30 minutes.
5. Finely chop the remaining cilantro and dill, add 1/4 teaspoon of ground red pepper, 1 teaspoon of hops-suneli, 1/4 teaspoon of saffron.
6. Peel the garlic and chop finely.
7. Grind herbs with spices and chopped garlic in a mortar.
8. Cool the boiled tomatoes, cut out the green stalk, grind through a sieve to get rid of the grains. Mix with herbs and garlic, season with salt and pepper.
9. Put the mixture on low heat and cook for another 1,5 hours, stirring constantly.
10. Cool the sauce and place in sterilized jars.
11. Roll up and wrap in a towel until it cools.
12. Serve chilled satsebeli in a gravy boat, sprinkle with chopped fresh herbs on top.
