How to pickle cabbage in Georgian style
Food (for a can or saucepan with a volume of 3 liters)
White cabbage – 1 head of cabbage weighing from 1,5 to 2 kilograms
Beets – 1 piece of medium size
Garlic – 10 cloves
Bay leaf – 6 pieces
Allspice – 6 peas
Coarse black pepper – 1 teaspoon
Whole cloves – 3 pieces
Whole coriander – 1 teaspoon
Dill seeds – 1 teaspoon
Fennel seeds – 1 teaspoon
Granulated sugar – 200 grams
Coarse salt – 2 rounded tablespoons
Table vinegar 7% – 150 milliliters
How to pickle Georgian cabbage for the winter
1. Wash the head of cabbage, cut into four parts, remove the stalk.
2. Cut the cabbage into 2 cm squares.
3. Peel raw beets, coarsely grate or cut into strips.
4. Peel the cloves of garlic and cut them lengthwise into 4 pieces.
5. Put cabbage, beets, garlic in layers in a ceramic or enamel container.
6. Tamp, lay the required number of additional layers.
7. To prepare the marinade, boil two liters of water by dissolving 2 tablespoons of salt and a glass of sugar in it.
8. Pour all spices and lavrushka into boiling liquid, leave on fire for 4 minutes.
9. Reduce heat to low, pour in vinegar, turn off after 2 minutes and leave to cool.
10. When the marinade has cooled to room temperature, pour it into a container with cabbage to the brim.
11. Press the Georgian cabbage with a lid or plate of the appropriate diameter, set the oppression.
12. Add the remaining marinade as needed, every one or two days.
13. Pierce the cabbage once a day to the bottom with a fork or wooden stick.
14. After three days, check the readiness of the cabbage, if it is not marinated enough, leave it for another day or two.
