3. Rub the adzuki through a sieve, removing the dense shell of the beans and leaving only the flesh.

4. Add sugar and salt to the adzuki, mix and rub through a sieve again.

How to cook anko deliciously

Anko, also known as adzuki paste, ogura, hundosha and sweet bean paste, is a Chinese-made dessert. In Russia, that would be the name of bean jam.

To prepare anko, you need a special kind of beans – angular beans, otherwise called adzuki or angular veigna.

For the preparation of fillings for sweet pastries, the 2nd method of boiling anko is used, so that the filling is the softest (without inclusions of the shell). Sugar is also added to the anko for extra softness.

Ideally, use Japanese johakuto white sugar to make anko.

Anko is used in the preparation of many dishes in China, Japan, Korea, imparting moderate sweetness or density to them.

In the anime television series, Naruto is called the character has a name – Anko Mitarashi after the name of his favorite treat.
