How to cook alletta
Products
Ruff, dorada, sea bass, perch or other fish – 2 medium-sized, 15-20 centimeters long (about 400 grams)
Carrots – 1 large
Onions – 1 head
Celery – 3 pods
Garlic – 5 teeth
Potatoes – 4 large
Salt – 1 tablespoon
Black peppercorns – 10 pieces
How to cook alletta
1. Peel the fish, gut, wash under cold water and place in a 3-liter saucepan.
2. Pour 2 liters of cold water over the fish and put on high heat.
3. After boiling, reduce heat, remove foam and cook fish for 15 minutes.
4. Strain the broth, return the pan to the fire.
5. Cut the fish and gut, divide the fillet by hand into pieces and put in a saucepan.
5. Wash the potatoes, peel and cut into cubes with a side of 1,5 centimeters.
6. Peel and finely chop the onions.
7. Cut the carrots into quarter-circle slices 2 millimeters thick.
8. Peel and chop the garlic.
9. Peel the celery and chop finely.
10. Put the vegetables in a saucepan and cook the allette for 10 minutes.
11. Salt and pepper the soup, stir, cook for another 5 minutes, then leave for another 10 minutes under the lid.
