How to cook pork leg jellied meat

What will you need?

Pork legs – 1 kilogram

Chicken leg – 300-400 grams

Onions – 1 head

Carrots – 1 large

Garlic – 3 prongs

Parsley and dill – 1 small bunch each

Salt – 1 tablespoon

Ground black pepper – 1 teaspoon

How to cook pork leg jellied meat

1. Soak pork legs in water for 2 hours. Thoroughly wash the pork legs, removing any dirt with a food brush or knife.

2. Put the legs in a saucepan, fill with water so that the water level is 6-7 centimeters higher than the level of the pork legs.

3. Put the saucepan on high heat, bring water to a boil, reduce heat to low, so that the water boils a little. Skim off the foam regularly.

4. Cook the pork legs for 2,5 hours under a loosely closed lid, then add the chicken leg, peeled carrots and peeled onion to the pan.

5. Cook the jellied meat for another 1,5 hours.

6. Salt and pepper the jellied meat, add herbs (right in the bunches).

7. Peel the garlic, chop and add to the jellied meat.

8. Cook for 1 hour more, skimming off the foam.

9. Strain the broth through cheesecloth, remove the vegetables.

10. Put the meat on a dish, separate the bones, chop the meat finely. Separate the cartilage from the bones and chop finely.

11. Divide the meat into jellied dishes.

12. Pour the jellied meat with broth.

13. Cool the jellied meat and put in the refrigerator for 8 hours.

 

Delicious facts

Buy pork legs are better in already known butcher shops, where pork legs were definitely not frozen.

– You need to sort out the meat of boiled pork legs as carefully as possible, not allowing even the smallest ones to get into the jellied meat bones… It is recommended to strain the broth.

Serve pork leg jelly with horseradish or mustard.

– If the jellied pork legs not frozen, you can add edible gelatin to the broth. For every 500 milliliters of warm (not boiling water!) Broth, provide 10 grams of gelatin. Stir gelatin quickly in broth, leave for 10 minutes and then strain.

– To give pickled flavor pork leg jellied meat should be added before pouring into molds 1 teaspoon of vinegar 9%.
