It’s just fermented juice from apples. It is made from a cloudy juice squeezed from fresh apples called must and fermented like wine. So cider is wine apple, although in terms of strength much weaker because most often it contains from 2% up to 8% alcohol. It tastes more like beer and is also served to rather consumed in traditional half-liter beer mugs. Increasingly, in in shops we can buy cider made of other fruits, mostly pears.

The first mention in Poland of Fr. cider, called cider, can be found in the book of Crescentius from 1571. However, in 1588 Calvinist writer Anselm Gostomski, in his work “The Farm”, urged people to quit wine in favor of this drink. For centuries, however, cider was the commoner’s drink, the aristocracy despised him, so it is rarely mentioned in early literature. The turning point was the nineteenth century, when all over the world the fashion for cider has emerged. Suddenly, many farms in Poland were taken care of the production of this drink, and the cookbooks were full of recipes as much as possible make it. Cider shows a strong antioxidant or antioxidant effect. We know that free radicals circulating in the body damage proteins and lipids. They can lead to the development of atherosclerosis, glaucoma or Parkinson’s disease. Where do the antioxidants in cider come from? They come from apples, which are the main ingredient of the drink. That is why it is so important that the cider apples are not peeled. The skin contains the most antioxidant compounds, i.e. ingredients that positively affect the functioning of the body. Among the antioxidants present in apples and cider, flavonoids, anthocyanins, phenols and triterpenoids dominate. Quercetin, belonging to the flavonoids, not only destroys free radicals, but also has strong anti-inflammatory properties and strengthens the walls of blood vessels. Ursolic acid (triterpenoid) is noteworthy, as it inhibits the growth of cancer cells, and also has antibacterial properties and reduces inflammation. Cider is also a good source of potassium – a compound that improves muscle function. In terms of calories, this drink is similar to wine. There are 100 to 36 calories in 42 ml of cider.

— Cider is a seasonal drink for now, it is mainly sold in summer as an excellent refreshment. I notice however, it is increasingly replacing traditional beers sold in pubs. Girls especially like him, I see it in the pub when I am around a mixed company sits at one table, men order beer, and women in the same establishments, they increasingly buy cider. Serve the cider from the fridge. The temperature should be that of the beer. Simple industrial ciders are better cool very strongly, quality natural ciders should be served at 10-12 degrees C.
