How I reinvented tangerine wine: tastes like juice, but with a surprise

On New Year’s Eve, one of our friends “Santa Claus” brought us two boxes of tangerines. Guys, I’ll tell you so much vitamin C in my body has never been! We ate them all holidays.

But when they were satisfied, they could no longer look at them, they began to treat friends and everyone who came to visit, but it seemed that the supply was endless … Then the idea came to make wine. Just recently I took a sample and I want, Vyacheslav, to share this wonderful recipe with your subscribers.

How did the idea for making wine come about?

When there is a product in the house that you can no longer look at, you begin to think that you can get something useful from it. It was necessary to come up with something. It’s a pity if the gift just goes bad.

The decision came by itself, a holiday, fun, alcohol, but can we make me wine from tangerines? And what, we cook from apples, why it doesn’t work out of tangerines.

Where can I find a recipe for tangerine wine? There are many different recipes on the Internet, but I turned to books in the old fashioned way. I read several manuals on winemaking and “developed” my own recipe for a citrus drink.

Meet my personal tangerine wine recipe. The ingredients, of course, are not cheap, since tangerines are not apples that grow in our garden, but believe me, the drink is worth it.

What is required for wine

  1. Tangerines – 5 kg.
  2. Sugar – 200 g per 1 liter of juice
  3. Water – half a glass per 1 liter of juice.
  4. Wine yeast – 1 pack.

You can add more or less water. It’s like with juice, someone likes concentrated citrus, freshly squeezed, someone dilutes it with water. I presented the average volume, which suits my taste.

And now about the cost, let’s count.

  • a kilogram of tangerines for a promotion can be taken for 50-60 r, a total of 5 kg costs 300 r;
  • yeast – about 100 r;
  • sugar for 3 liters of juice will require about 600g – this will come out by about 20r.

Total for all the ingredients you need 420r. And it should turn out somewhere around 2,5 – 3 liters of aromatic wine. That is, the cost of 1 liter is 150-170 rubles. Not too expensive for quality alcohol.

Cooking wine

Making wine is quite simple, but you need to be patient.

  1. Wash tangerines thoroughly, peel. We take ripe, but without rot. The sweeter the better.
  2. Squeeze out the juice.
  3. From 5 kg of tangerine comes out almost 3 liters of juice. Pour it into a 5 liter jar.
  4. We add wine yeast to the juice (according to the instructions on the package) and 450 g of sugar, the pulp of squeezed tangerines, water.
  5. Stir and close up with gauze so that no dust gets in.
  6. After 3 days, a foam cap will appear on the surface, a characteristic sour smell will be felt – fermentation has begun.
  7. We filter the future wine through several layers of gauze into the same jar. Squeeze out the pulp, discard it.
  8. Add 150 g of sugar. We mix everything, put on a rubber glove on top.
  9. We send to a warm dark room. “Link” will last a month and a half. Until the bubbles rise from the bottom, and the glove will “stand”.
  10. A month after fermentation is over. Young, almost ready, wine is poured into bottles.

If there is a lot of juice, then you should take a larger container, since during the fermentation process a “foam cap” will still form.

The last stage remains – maturation. During this period, you will have to wait six months for the wine to reach, periodically it needs to be filtered, as sediment will appear. If this is not done, the wine will turn sour.

Trying the result

Yes, it is best to taste the wine after 6 months, but I decided to uncork the first bottle for testing in three – in April. What we got as a result is a light aromatic wine. Its strength is small, so many people mistake it for juice until they get tipsy.

The color is sunny yellow. The taste is really like tangerine juice, refreshing with a citrus aftertaste.

If I had not tried this wine, I would not have even thought to go buy tangerines and make something similar out of them when I met the recipe on the Internet. So it would be better to gobble up. But after tasting such wine, now every time after the New Year, I will take 5 kg of citrus fruits and prepare several bottles for the summer.

A drink made from tangerines turns out to be very pleasant in taste, light and fragrant. On a summer evening, it will perfectly decorate any conversation.
