The importance of eggs in baking is very great: whipped whites add fluffiness and tenderness, the yolks give a beautiful color and crumbling to products, and most importantly, eggs are able to combine immiscible ingredients such as water and butter.
But there are situations when the use of eggs is impossible for medical reasons, or, for example, they are simply not at hand. Let’s try to replace this ingredient, because there are options:
1. Vinegar and soda
With this combination, baked goods rise perfectly without eggs. Better take apple cider vinegar or wine vinegar. 1 teaspoon of baking soda, slaked with 1 tablespoon of vinegar, replaces one egg.
2. Banana and applesauce
A banana and 6 tablespoons of applesauce will replace 2 eggs and combine all the ingredients in the dough into a homogeneous mass, but add additional baking soda for splendor.
3. Mayonnaise
Three tablespoons of mayonnaise replaces one egg.
4. Potato starch
If you mix one tablespoon of potato starch, sour cream, and water, you get a bonding mixture that perfectly replaces one egg.
5. Flax
Pour the ground flax with boiling water in a ratio of one to two and leave for about 5 minutes until gelatinous. 1 tablespoon of ground flax is a substitute for one egg. The baked goods acquire a nutty flavor and a high density.
6. Soy flour
1 teaspoon of soy flour diluted in one tablespoon of water replaces one egg.
