How and where to store pollock correctly?
Pollock is most often sold chilled or frozen. After purchasing this fish, it is important to follow several rules for its storage. Alaska pollock can retain its taste, structure and useful qualities only under certain temperature conditions.
The nuances of storing pollock:
- if pollock was purchased frozen, but on the way home the fish thawed, then it is better to eat it immediately (repeated freezing of pollock is unacceptable);
- you can defrost frozen pollock only by moving the fish from the freezer to the refrigerator or using cold water (heat exposure in this case is not permissible);
- some cooks recommend freezing chilled pollock for an hour before starting the cooking process (the recommendation applies only to chilled pollock, you cannot freeze thawed fish);
- in the refrigerator, chilled pollock is best stored in a bowl with ice;
- before placing in the refrigerator, you can lower the pollock in cold water (the container with liquid and fish must be placed in the coldest zone of the refrigerator);
- pollock is well stored in ice glaze (the fish is placed in a pan filled with cold water, and then the workpiece is placed in the freezer, after the formation of a layer of ice 5-6 cm, the pollock is wrapped in plastic wrap or plastic bag and stored with other frosts);
- without an ice crust during long-term freezing, pollock can become drier and disrupt its taste;
- if pollock is stored in the refrigerator, then the container with fish must be closed (otherwise, some characteristics of both products and pollock may be violated from the neighborhood with other products);
- you can preserve the juiciness and freshness of pollock in the refrigerator using cold water (you just need to fill the fish with liquid and put the container with it on the lower shelf of the refrigerator);
- pollock with caviar is stored less than gutted fish (caviar must be removed before storage or consumed immediately after purchase);
- chilled pollock will better retain its flavor and aroma if you sprinkle it lightly with lemon juice.
Pollock has its own distinctive meat properties, texture and shelf life. It is better to eat this fish immediately after purchasing it. The method with an ice crust is considered the ideal storage option; other methods, although they will extend the shelf life of the fish, can disrupt its structure. For example, if temperature fluctuations were allowed during storage, then during frying the pieces of fish may fall apart and lose their shape.
How much and at what temperature to store pollock
You can store pollock in different temperature conditions. The shelf life will differ in each case. Sharp temperature changes can negatively affect the quality of fish, so storage at home should be treated with a high degree of responsibility. In addition, improperly stored fish products can cause serious health problems.
The ratio of temperature and shelf life of pollock:
- from -10 degrees and below – up to 10 months;
- from –18 degrees – 7-9 months;
In the refrigerator, pollock can be stored on the bottom shelf for no more than two days. If the fish has not been cooked within 24 hours, then it is better to freeze it. After two days of storage, it is not recommended to freeze pollock; it is better to immediately use it to prepare the planned dish.
In ice glaze pollock can be stored for 6 months… Defrosting a thick layer of ice is not difficult. It is enough to dip the fish in cold water or just leave it in a bowl on the top shelf of the refrigerator. The ice will melt pretty quickly and pollock can be cooked in any way.
