How and where to store green onions?
You can store green onions for a long time. However, this process implies compliance with a number of rules. For example, if you rinse the onion and put it in the refrigerator in a plastic bag, it will deteriorate in almost a day.
The nuances of storing green onions at home:
- before any storage method, green onions should not be washed with water (if there is dirt on the surface of the feathers, it is better to remove them with a napkin or shake them off without damaging the onion);
- if moisture, for any reason, has got on the green onions, then you need to dry them thoroughly (for this you need to spread it out in an even layer and wait until the moisture evaporates naturally);
- if the green onions are bought with small bulbs and they have just begun to form, then you can wrap them first with a damp cloth and then with paper, you can fix the structure with an ordinary thread (in this state, the green onions must be placed in the refrigerator, due to the moistening of the bulbs, it will last longer);
- in a glass jar, green onions can be stored for two months (the onions must be placed in a glass jar and refrigerated, having previously closed with a lid, while the feathers should in no case be wet or wet);
- if green onions are stored in the refrigerator, then the feathers should never be cut or bent (this will spoil the onion faster);
- it is possible to store green onions in the refrigerator in a plastic bag only if holes for ventilation are pre-made in the polyethylene (otherwise, condensation will accelerate the process of rotting of feathers);
- when storing green onions, it is imperative to remove dry, starting to rot or feathers with other defects (they can accelerate the process of drying or decay of the entire bunch);
- when storing green onions in the refrigerator, you can use paper as packaging (it is better to take not a newspaper, but thick paper or parchment);
- you can freeze green onions in plastic bags, foil or containers with lids (packaging or container in this case does not play an important role);
- freezing is considered the only storage method in which green onions can be pre-washed (in this case, it is even recommended to rinse it, but after that the feathers must be dried naturally);
- in order for the green onions to remain frozen longer, it is recommended to pre-blanch them in boiling water for 2-3 minutes (after which the onions are cooled and dried, and only then are packed and sent to the freezer);
- you can save green onions for a long time without freezing using salted brine (chop the onions, put them in a glass jar or container and pour water and salt);
- when storing green onions with salt, water can not be used (green onions must be chopped, mixed with coarse salt and placed in any container with a lid, such a blank can only be stored in the refrigerator);
- if chopped green onions are poured with any vegetable oil, then the feathers will also retain their juiciness and freshness longer (it is recommended to use olive oil).
The disadvantages of storing onions with salt or vegetable oil are considered to be the limitation of the ways of their further use. Such an onion is suitable for soups, main courses, but in its pure form (without heat treatment) it will be quite problematic to use it.
How much to store green onions
The shelf life of green onions largely depends on the temperature regime. At around 0 degrees, feathers can keep fresh and juicy for one to two months. At temperatures ranging from 3 to 4 degrees, onions will last no longer than 3 weeks. These conditions apply to the refrigerator. At room temperature, green onions will dry out in a few days.
Chives can be stored frozen for 6-7 months. Repeated defrosting or partial thawing of feathers must be excluded. You can freeze onions in the form of whole or chopped feathers.
