Honey mushroom dishes: recipe. Video
In terms of their nutritional properties, honey mushrooms are not inferior to porcini and boletus mushrooms. They contain many useful trace elements and vitamins that have a beneficial effect on the thyroid gland and the body as a whole, as well as antibacterial substances. In addition, honey mushrooms are leaders in the mushroom kingdom in terms of their dietary properties. But the most important thing is that you can cook a variety of original and delicious dishes from them.
Fried mushrooms with homemade noodles
To prepare honey mushrooms according to this recipe, you must first knead the noodle dough, and then fry the mushrooms in a creamy sauce. The recipe is for about 4-5 servings.
Ingredients for the dough: • flour – 350 g; • egg yolks – 5 pcs .; • egg – 1 pc .; • hot water – 100 ml; • olive oil – 2 tbsp. spoons; • salt to taste.
Ingredients for mushrooms: • honey agarics – 250 g; • sour cream – 1 tbsp. a spoon; • butter – 0,5 tbsp. a spoon; • lemon juice – 1 tbsp. a spoon; • garlic – 2 cloves; • olive oil – 1 tbsp. a spoon; • parsley – 1 bunch; • salt and black pepper to taste.
Sift flour and make a small slide with a depression out of it. Whisk the egg yolks and whisk everything into the well. Add olive oil, water and salt there. Knead hard dough. It shouldn’t stick to your hands.
Rinse the mushrooms thoroughly under running water. Melt the butter and olive oil in a skillet and fry the garlic in it while the skillet is not too hot, otherwise it will burn out quickly.
Add honey mushrooms to the pan and fry them for a few minutes over medium heat. Then add lemon juice to them, salt and pepper and cook for another 20 minutes. 5 minutes before the end, add a spoonful of sour cream and parsley to the pan.
Roll out the dough into a very thick layer. Sprinkle it with a little flour, roll it up and cut obliquely. Use your hand to gently loosen the noodles.
The thickness of the noodles will depend solely on the thickness of the dough. To prepare a real cobweb, it is necessary not only to roll it out thinly, but also to cut it
Boil water in a saucepan, add salt and add noodles. Boil until tender, fold in a colander.
Distribute the noodles on plates and place the fried mushrooms on top of it. This recipe allows for some changes. For example, you can cook it without sour cream, and instead of lemon juice, pour in half a glass of white wine.
Honey mushrooms cooked in a pot
Ingredients: • fresh mushrooms – 0,5 kg; • butter – 3 tbsp. spoons; • meat broth – 3 tbsp. spoons; • parsley and dill – to taste.
Clean mushrooms and wash thoroughly under running water. Boil 15 minutes after boiling in salted water. Then drain the water and let the mushrooms dry for a while.
Pour a little melted butter into the pots and put honey mushrooms in them. Add a little broth, salt and pepper to taste, place in an oven preheated to 180 ° C. Cook at this temperature for about 30 minutes. Add chopped herbs to the finished dish, mix everything and serve it to the table.
You can also add sour cream to this dish.
Pickled honey mushrooms and radish salad
Ingredients: • pickled mushrooms – 400 g; • radish – 100 g; • olive oil – 2 tbsp. spoons; • green onions – 1 bunch.
Throw the pickled mushrooms in a colander to get rid of the marinade. Rub the radish on a coarse grater and mix with the mushrooms. Add coarsely chopped green onions to them and season with olive oil. This salad can also be a great snack for alcoholic drinks.
Pickled honey mushrooms can be used purchased or prepared independently when creating this dish. In the latter case, the washed mushrooms must be folded into a saucepan and boiled until they begin to sink to the bottom. Then drain the broth and pour the marinade over the mushrooms.
Marinade recipe: • water – 1 liter; • salt – 2 tbsp. spoons; • sugar – 2 tbsp. spoons; • bay leaves – 2 pcs .; • carnation – 5 pcs .; • garlic – 2 cloves; • allspice – 5 pcs .; • acetic acid – 1 tbsp. a spoon.
Boil the mushrooms in the marinade for another 10 minutes. Then put the mushrooms in jars, cover with marinade and roll up. Put the cooled jars in the refrigerator or in a cool dark place. Thus, you still have mushrooms for the winter. After a couple of days, rolled up mushrooms can be used for salad.
Creamy honey mushroom soup
To prepare a soup according to this recipe, you will need: • honey mushrooms – 250 g; • onion – 1 pc .; • potatoes – 4 pcs .; • carrots 1 pc .; • processed cheese – 50 g; • leeks – 50 g; • meat broth – 1,5 l; • cream – 100 ml; • butter – 60 g; • salt to taste; • parsley – half a bunch.
Boil the stock and add the diced potatoes and carrots. Boil vegetables until half cooked. Then put finely chopped onions and 100 g of honey agarics to them, salt to taste. Boil the vegetables until tender, turn off the heat and let the soup stand for a while and cool on its own.
In butter, fry the leeks, cut into strips. And then add the remaining mushrooms to it. Cook them over medium heat for about 15 minutes.
Bring the stock with vegetables to a creamy consistency using a blender. Heat again, add cream, leeks and mushrooms from the pan, and finely chopped processed cheese. Stir everything thoroughly so that the cheese is completely dissolved. Pour the creamy cheese soup into bowls, sprinkle with finely chopped parsley and serve.
