For homemade yoghurt, use milk of varying degrees of fat. The lower the fat percentage, the more dietary the final product will be. For creamy yoghurt, you can add natural cream to milk. An important condition for the preparation of a delicious delicacy is the unconditional freshness and high quality of the products. Properly prepared yoghurt has a delicate, viscous consistency. It should be homogeneous, without lumps and clear exfoliated liquid.

You will need: – fresh milk; – dry starter culture for yoghurt.

Boil the milk and cool it down. Turn on the yoghurt maker at maximum power. Pour out a small portion of the warm milk and stir in the dry starter culture. Rub the mixture thoroughly to remove any lumps. Pour the stirred starter culture into a saucepan of milk and stir again.

If you are unable to boil milk, use a pasteurized product

You can buy a ready-made starter culture at the store. But if not, use commercially produced yoghurt or a homemade product from a previous batch. Put 5-6 tablespoons of yogurt in warm milk and stir until completely dissolved. Usually, yogurt from homemade sourdough is more liquid – you can experimentally determine the desired consistency.

Pour the prepared semi-finished product into clean and dry jars and place them in a yogurt maker. Place the lid on the appliance. The cooking time of the product is indicated in the instructions, but usually the whole cycle takes about 6 hours. Do not overexpose food inside the appliance. If the yoghurt takes too long to heat, it will curl up and some of it will flake off as whey. Such yoghurt tastes sour and is not suitable not only for food, but also for use as a leaven.

Remove the finished yogurt from the device, cool at room temperature and put it in the refrigerator, closing the jars with lids. Fresh yogurt is useful not only for breakfast or afternoon tea, it can be used to make cocktails, sauces and even homemade face masks.

Delicious delicacy – yoghurts with additives

Homemade yoghurts with various additives are tastier and healthier than purchased ones. Jam, sauces and fruits are added before fermentation or poured over the finished product. You can make adjustments to the recipe by increasing or decreasing the amount of sugar.

Try yogurt with berry sauce.

You will need: – 0,75 cups of frozen strawberries or raspberries; – 2 tablespoons of sugar; – 1 teaspoon of potato starch.

Put frozen berries in a saucepan, add sugar. While stirring, cook the mixture until the sugar dissolves. Dissolve the starch in a quarter cup of cold water, pour the mixture into a saucepan, stir and heat to a boil. Then remove the sauce from heat and cool.

Before preparing yoghurt, put a spoonful of ready-made berry sauce on the bottom of each jar. Then pour the sourdough milk into the containers and turn on the yogurt maker. After 6 hours, the homemade treat will be ready. This yogurt can also be made with ready-made jam or jam.

Homemade chocolate yogurt is a very healthy treat. To make the product not too high in calories, put less sugar in it.

You will need: – 1 liter of milk; – yogurt starter; – 6 teaspoons of cocoa powder; – 6 teaspoons of sugar; – 1 teaspoon of vanilla sugar; – 50 g of dark chocolate.

Boil milk, add cocoa, vanilla sugar and granulated sugar. Stir the mixture until the sugar is completely homogeneous and dissolved. Chill the mixture a little, add the leaven and rub thoroughly.

Turn on the yogurt maker. Pour the chocolate mixture into jars, place it inside the appliance and cover with a lid. Cook the yogurt for about 6 hours, then refrigerate it at room temperature and store in the cold. Grate the chocolate and sprinkle it over each serving before serving. Instead of grated chocolate, you can sprinkle cocoa yogurt with chopped nuts or pour over prepared chocolate syrup.
