Ripe fresh, frozen or dried (two times less than indicated in the recipes) red or black mulberries are suitable for making mulberry liqueurs. Berries need to be sorted out, removing spoiled and moldy. Try to make a drink immediately after harvest, before the fruit has lost its flavor.
The alcoholic base can be store-bought vodka, cognac, diluted with water up to 40-45% medical or ethyl alcohol, well-purified moonshine. The shelf life of all liqueurs is up to 3 years.
Mulberries do not always give a rich organoleptic, often the fruits are watery and tasteless, so other spices and spices are added to liquors, and cognac is the best alcohol for infusion.
Classic mulberry liqueur
A drink with a characteristic aroma and taste of mulberries, but requires the highest quality raw materials.
Ingredients:
- vodka – 0,5 liters;
- mulberries – 2 cups (400 grams);
- sugar – 400 gram;
- water – 200 ml.
Recipe
1. Grind the washed berries into a pulp, then put them in a jar.
2. Mix sugar and water in a saucepan. Bring to a boil, reduce heat, cook for 2-3 minutes, skimming off the foam. Cool the finished syrup to room temperature.
3. Add cold sugar syrup and vodka to the jar of berries. Mix.
4. Close the jar tightly, transfer to a dark room with a temperature of 18-25°C. Leave for 20 days. Shake every 3-4 days.
5. Strain the finished liquor through gauze and cotton wool (removes dregs). Pour into bottles for storage. Fortress – 25-30%.
Silky liqueur with hints of lemon
The long-term insistence of mulberry on cognac in the cold with the addition of zest and lemon juice creates an unsurpassed taste that cannot even be compared with anything.
Ingredients:
- mulberries – 500 grams;
- cognac (vodka) – 0,5 liters;
- sugar – 300 gram;
- water – 150 ml;
- lemon (large) – 1 piece.
Recipe
1. Lightly mash the berries with a fork, put in a jar, pour brandy (preferably).
2. Remove the zest from the lemon – the upper yellow part without white bitter pulp. Squeeze the juice of the fruit to the berries.
3. Throw the zest into the jar, close the lid, put in a cool place for 2 months. Shake every 14 days.
4. Filter the finished infusion through gauze.
5. Cook sugar syrup according to the technology described in the first recipe.
6. Mix mulberry infusion and cold syrup. Store in a refrigerator or cellar in a sealed container for 30 days.
7. Filter the finished mulberry liqueur through cotton wool to obtain a transparent color. Fortress – 25-30%.
Mulberry liqueur with condensed milk
The fastest recipe, the drink will be ready in 30 minutes after preparation. Lovers of sweet milk liqueurs with a fruity flavor will like it.
Attention! Use only high-quality condensed milk without palm and other vegetable oils, otherwise the taste of the liquor will be noticeably worse.
Ingredients:
- black mulberry – 400 grams;
- raw condensed milk – 300 grams;
- vodka – 300 ml;
- sugar – 2 tablespoons;
- water – 150 ml.
Recipe
1. Place the berries in a saucepan, add water and sugar. Bring to a boil over low heat, stirring occasionally. Cook after boiling for 10 minutes.
2. Remove the pan from the heat, cool the mixture to room temperature. Squeeze the juice through the cheesecloth, the pomace is no longer needed.
3. Mix mulberry syrup and condensed milk. Beat with a mixer for 30 seconds.
4. Pour in vodka, then stir for another 20-30 seconds.
5. Pour the milk silk liqueur into a bottle. Put in the refrigerator for 30-45 minutes.
6. You can proceed to the tasting. Fortress – 15-20%.
Silk liqueur with almond flavor
The original recipe with the addition of almonds, which perfectly complement the mulberries.
Ingredients:
- mulberries – 450 grams;
- vodka – 400 ml;
- sugar – 200 gram;
- water – 300 ml;
- almonds with skin – 1 handful (30 grams).
Recipe
1. Fold the crushed mulberry in a jar, add almond nuts, pour vodka.
2. Close tightly, insist in a dark cool place for 30 days. Shake once a week.
3. Add sugar syrup prepared as in the first recipe. To insist another 15-20 days.
4. Filter the finished mulberry liquor through gauze and cotton wool. Pour into bottles, seal tightly. Fortress – 25-30%.
