Homemade marshmallow recipes: photos and videos
Airy, tender, tasty marshmallows can be cooked at home. And for this you do not need to have any special culinary skills. In addition, homemade marshmallows are much healthier, as they do not contain dyes, flavors and preservatives.
How to make homemade vanilla marshmallows
You will need:
- 3 cups caster sugar
- 250 ml of water
- 20 g powdered gelatin
- 1 tsp citric acid
- 1 tsp baking soda
- 1 glass of powdered sugar
Start your homemade marshmallow by soaking the gelatin. Pour 150 ml cold water into a cup and add gelatin, stir and set aside for 1 hour to swell. Pour 100 ml of water into a saucepan, heat, add sugar, stir, bring to a boil and boil the syrup. Pour hot sugar syrup into the swollen gelatin and beat with a mixer until whitened. Add citric acid, continue whisking. Add baking soda and vanilla and beat for another 4 minutes, then use a syringe with a wide curly nozzle to place the mass in portions on a baking sheet moistened with water. When the marshmallow dries, remove it, combine in pairs and roll in powdered sugar.
You can also make chocolate marshmallows using the same recipe. After preparing the treat, melt a large bar of dark chocolate in a water bath and dip the marshmallows in the resulting viscous mass. These homemade sweets look very appetizing and very tasty.
How to make homemade apple marshmallows
You will need:
- 4 apple
- 250 g sugar
- 1 raw egg white
- 1 sachet of vanillin
For syrup:
- 500 g sugar
- 160 g of water
- Xnumx agar agar
- a glass of powdered sugar
Fill the agar-agar with water, let it stand and get wet. Cut the apples in half, remove the seed center. Place the apples in the microwave and bake. Scrape out the pulp with a spoon, discard the skin. Use a blender to mash the pulp or rub through a sieve. Combine applesauce with sugar, add vanillin and leave to cool.
Take apples of sweet varieties with a pronounced aroma
Place the agar agar on the stove and heat until it is completely dissolved in the water. Add sugar and bring to a boil. Boil the syrup for 5 minutes and check for consistency. If it stretches behind the spoon in the form of a thin thread, remove from the stove and cool slightly.
Add the egg white to the applesauce and sugar mixture and beat until frothy. Carefully pour in the slightly cooled agar syrup in a thin stream. At the same time, beat constantly, as a result you should get a very thick mass. Next, quickly transfer it to a bag with a nozzle and squeeze out in small portions onto pre-spread baking paper.
Place the marshmallows on paper very quickly so that the mass in the pastry bag does not have time to cool down, as agar-agar sets already at a temperature of 40 ° C
After a day, remove the marshmallow halves from the paper and glue in pairs, and then roll in powdered sugar.
