You will need: – 1 glass of kefir; – 2,5 cups wheat flour; – 1 teaspoon of baking soda; – 1 tablespoon lemon juice; – 2 tablespoons of sugar; – 0,5 teaspoon of salt; – vegetable oil for frying.
Pour the kefir into a deep bowl, add salt, sugar and soda, slaked with lemon juice. Whisk the mixture until smooth and add flour in portions. The dough should acquire the consistency of sour cream. Rub it thoroughly to avoid lumps and let the mixture sit for a few minutes.
To make the pancakes lush, sift the flour before kneading the dough.
Pour the oil into a large skillet and heat it up. The readiness of the oil can be checked by throwing a small crouton into it; it should quickly brown. Pour the dough into the pan in portions, leaving gaps between the pancakes: they will increase in volume during baking.

Grind eggs with salt and sugar, add sour cream, yogurt and soda, mix everything. Pour in the sifted flour in portions and let the dough stand.
