Homemade liquor from shadberry

Homemade shadberry liquor is characterized by light sourness, balanced by sugar, and a pleasant berry aroma. This is a great dessert or feminine drink. The cooking technology is standard, it is only important to find high-quality raw materials.

Fresh or frozen (use with thawed liquid) shadberry of any variety is suitable. Berries should be ripe and not rotten. Vodka, ethyl alcohol diluted with water or well-purified moonshine (distillate) without an unpleasant odor are suitable as an alcoholic base for liquor.

Ingredients:

  • berries of irgi – 0,5 kg;
  • vodka (moonshine, alcohol 40-45%) – 0,5 liters;
  • sugar (honey) – 100-200 grams (to taste);
  • cherry leaves – 25 pieces (optional);
  • water – 50-100 ml.

Honey (especially liquid flower) is preferable to sugar, as it softens the taste better. The proportions of water and sugar (honey) can be adjusted at your discretion in any direction, changing the strength and sweetness. Cherry leaves make the flavor of the drink richer.

Irgi liqueur recipe

1. Knead the washed irgu with your hands or a wooden rolling pin, trying to crush each berry.

2. Put the resulting mass together with cherry leaves into a glass container for infusion. Pour in vodka. Mix.

3. Seal tightly. Put the container for 12 days in a dark place at room temperature. Shake once a day.

4. Strain the finished infusion of irgi through cheesecloth, squeeze it well, the cake is no longer needed.

5. Filter the liquid part through cotton wool to remove the remnants of the pulp.

6. Boil syrup from water and sugar: mix in a saucepan, bring to a boil, boil over medium heat for 3-5 minutes, removing foam. The syrup is ready when the foam no longer appears.

In the case of honey, heat the solution no higher than 40 ° C and stir until completely dissolved in order to preserve the beneficial substances.

7. Mix the syrup cooled to room temperature with berry infusion. Pour into bottles for storage. Close hermetically.

8. Leave for 5-10 days in a dark, cool place to stabilize the taste.

When turbidity appears (more often appears when honey is added), filter again through cotton wool.

Shelf life away from direct sunlight – up to 3 years. Fortress – 15-20%.
