- The final step after removing the vegetable mass from the heat is the addition of salt and dry black pepper.

Caviar in the oven
Using the oven will greatly simplify the process of preparing caviar:
- Eggplant (1 kg) should be thoroughly washed and wiped with a towel. Then they are greased with vegetable oil and laid out on a baking sheet. The oven is heated to 190 degrees and a baking sheet is placed in it.

- Eggplants (3 pieces) are cut into two parts, sweet pepper – into four parts. Spread the vegetables on a baking sheet, put garlic (10 cloves) on top.
- The baking sheet is placed in the oven for 25 minutes.
- During this time, one onion is cut into strips, two carrots are rubbed on a grater.
- Onions and carrots are fried in a pan with the addition of sunflower oil.
- Tomatoes are dipped in boiling water for a few minutes, then they need to be peeled and cut into cubes.

- Remove the eggplant and peppers from the oven and let them cool down. The pulp of vegetables is cut into cubes, after which the garlic is crushed. The resulting components are added to the vegetable mass in a saucepan.

Caviar with parsley

- Eggplant and tomatoes are mixed, parsley, salt, sugar, black pepper, olive oil and lemon juice are added.
Caviar in a slow cooker
Another way to simplify the process of preparing caviar is to use a slow cooker.
- Eggplant in the amount of 5 pcs. cut into cubes and placed in a container. If mature vegetables are used, peel them first. The container is filled with water so that it covers the vegetables completely, salt is added and a load is placed on top.
- Two onions are peeled and finely chopped. You also need to peel two carrots and grate them.
- The slow cooker is switched on to the “Frying” mode and vegetable oil is poured.
- First, the onion is fried until a golden hue appears, then carrots are added.
- Bulgarian peppers (5 pcs.) Are cut into pieces, removing the stalks and seeds, and placed in a slow cooker.
- Tomatoes (4 pcs.) Are placed in boiling water, then the skin is removed and the flesh is finely chopped.
- Chopped peppers are added to the vegetable mass.
- Water is poured out of the eggplant container, after which the vegetables are sent to the slow cooker.
- After 5 minutes, add the tomatoes.

- On the slow cooker, turn on the “Stew” mode and leave the vegetable mixture for 50 minutes.
