Date tincture is a drink with a characteristic persistent date aroma, mild taste, adjustable sweetness and a slight bitter aftertaste. A good option for dessert alcohol for coffee and sweet pastries.
For cooking, you need ripe dry dates with wrinkles on the skin, but without damage and mold. Fruit should not be too dry or shriveled. If the dates are light, they were picked not ripe. Well-purified moonshine, store-bought vodka or alcohol diluted with water is suitable as an alcohol base, but the best result is obtained on the basis of inexpensive but high-quality cognac, since dates perfectly complement the tannic notes of aged alcohol.
Ingredients:
- dates – 250 grams;
- vodka (moonshine, alcohol 40-45%, cognac) – 0,5 liters;
- sugar (honey) – 50-150 grams (to taste);
- cloves – 2 buds (optional);
- vanilla sugar – on the tip of a knife (optional).
With liquid buckwheat honey, the drink turns out better than when sweetened with sugar.

1. Remove pits from dates, but do not discard.
2. Put the pulp and bones in a container for infusion. Add cloves and vanilla sugar.
3. Pour in the alcohol base, mix.
4. Seal tightly. Move the container to a dark place at room temperature.
5. After 3 days, remove the seeds and cloves.
A short infusion with seeds will enrich the aroma with almond tones and add a slight bitterness, but the drink will not have time to absorb harmful substances.
6. Insist for another 12 days, shaking once a day.
7. Strain homemade date tincture through gauze or a sieve, squeeze the pulp well. Taste the drink, sweeten with honey (preferably) or sugar if desired.
8. Pour into bottles for storage, seal tightly. If turbidity or sediment appears in storage, filter through cotton wool.
Shelf life away from direct sunlight – 3-4 years. Fortress – 28-32%.
