In eastern countries, cheese cakes are very popular, here they are called khachapuri. A characteristic feature of such pastries is that cheese is always present in its composition. It is added to the dough or used as a filling. Today you can find your own variations of this dish in different cuisines.

Delicious cheese cakes are made with ham stuffing. To make such cakes, you will need: – 300 grams of kefir; – 200 grams of hard cheese; – 250 grams of ham; – 2 cups of flour; – 0,5 teaspoon of soda; – salt to taste.
Instead of ham, you can take boiled sausage or sausages
Mix kefir, soda and salt in a cup. Then add grated cheese to this mixture and gradually add flour, stirring gently. When all the flour is in the cup, knead a thick cheese dough.
Divide the dough into small pieces and roll out the flat cakes. Place some finely grated ham on one tortilla, cover with the other and pinch the edges. Shape the rest of the tortillas in the same way and fry them in vegetable oil until golden brown.
Tortillas with cheese filling
Lovers of cheese dishes will love the tortillas stuffed with this product. To prepare them, you will need: – 2 cups of flour; – 0,5 teaspoon of salt; – 0,5 teaspoon of soda; – 1 glass of kefir; – 200 grams of hard cheese; – vegetable oil for frying; – 1 egg.
Combine kefir, salt and soda in one cup, then add egg and flour to this mixture. Knead a soft dough, it should easily come off your hands. Roll an even number of small tortillas out of the dough.
Grate the cheese on a coarse grater and place on one tortilla, cover with another and pinch the edges. Form the rest of the cakes in the same way and fry them in well-heated vegetable oil.

Cheese cake with garlic and sesame seeds
Oven-baked tortilla stuffed with cheese and garlic, sprinkled with sesame seeds, has a spicy taste and wonderful aroma. For such baking, you will need the following products: – 1 egg; – 250 grams of low-fat cottage cheese; – 150 grams of butter; – 1 glass of flour; – 1 teaspoon of baking powder; – 0,5 teaspoon of sugar; – 0,5 teaspoon salt; – 200 grams of any cheese; – 2 cloves of garlic; – 3 tablespoons of sour cream; – 1 egg yolk; – 1 teaspoon of sesame seeds.
Mix the cottage cheese and butter thoroughly, then beat the egg into the mixture. Add baking powder, flour, salt and sugar. Knead a soft dough and put it in a warm place for 10 minutes.
Grate the cheese on a coarse grater, combine it with chopped garlic and sour cream. Whisk the egg yolk with a pinch of salt. Divide the dough into two and roll out into two circles. One circle should be slightly smaller than the other.
Place a small circle on a greased baking sheet and spread the cheese filling evenly over it. Cover the top with a second circle and pinch the edges. Brush the formed cake with yolk and sprinkle with sesame seeds. Place the baking sheet in an oven preheated to 180 degrees, bake until golden brown.
