Blackthorn liqueur (prickly plum) is a slightly tart dessert drink with a light plum aroma. Perfect with tea, coffee, fruit and sweet dishes. Contains only natural ingredients available. The technology of preparation is relatively simple.
For liqueur, you need a ripe blackthorn without signs of rot and mold. You can use frozen (pre-thaw and drain water) or dried (half the amount indicated in the recipe) berries.
The best alcohol base is vodka, ethyl alcohol diluted to 40-45 degrees or well-purified moonshine, preferably double distillation. You can also make blackthorn liqueur on cheap cognac or, like the British, on gin, then juniper notes will appear in the finished drink.
Ingredients:
- blackthorn berries – 600 grams;
- vodka (moonshine, alcohol 40-45%) – 1 liter;
- sugar – 300 gram;
- water – 300 ml;
- fresh mint – 70 grams (optional).
Mint slightly refreshes the taste, dried leaves are not as effective. The amount of sugar can be changed at your discretion, depending on how sweet liquors you like.
Blackthorn liqueur recipe
1. Wash the berries, remove the seeds. When insisting on strong alcohol, the bones emit harmful substances, so I advise you to get rid of them.
2. Place the pulp and peel in a jar for infusion, add 100 grams of sugar and mint leaves.
3. Fill the turn with an alcohol base. Close the lid tightly, shake several times.
4. Put the jar for 10-12 days in a dark place with room temperature. Shake once a day.
5. Strain the infusion through 3-4 layers of gauze. Squeeze the pulp well, it is no longer needed.
6. Mix water and remaining sugar (200 grams) in a saucepan. Bring to a boil, boil for 3-4 minutes, skimming off the white foam. Then cool to room temperature.
7. Pour sugar syrup into a jar of thorn infusion, mix.
8. Before use, it is advisable to keep the finished thorn liquor for at least 2-3 days in a dark, cool room. If sediment appears, carefully pour the drink through a straw into another container so that the sediment remains at the bottom. Additionally, you can filter through cotton wool. The process takes a long time, but the liquor is crystal clear.
