Home-style fried Chinese noodles. Video

There are several types of Chinese noodles that are used in a variety of dishes. Only according to the types of flour, noodles are divided into wheat, buckwheat, rice, soy noodles, but they can also be of different sizes and shapes and with various additives. The Chinese put noodles in soups, fries, served as a main course with various sauces. Fried Chinese noodles are especially popular with tourists.

Basic Chinese Noodle Recipe

In the East, they appreciate not only complex dishes made from exotic ingredients, but also simple, aromatic and tasty ones. Homemade Chinese noodles can be made with one of the easiest sauces in this kitchen. You will need: – 250 grams of any Chinese noodles; – ¼ cup of soy sauce; – 2 tablespoons of granulated sugar; – 4 cloves of garlic; – 2 tablespoons of rice vinegar; – 3 tablespoons of sesame oil; – ½ teaspoon of pepper oil; – 4 tablespoons of rapeseed oil; – 4 green onion feathers.

Pour 20 cups of cold filtered water into a wide, deep saucepan and bring to a boil, add the noodles and cook, following the instructions on the package for about 5-7 minutes. Thin rice noodles can be cooked and after 2-3 minutes, thick wheat noodles can be cooked much longer – up to 15 minutes. Place the noodles in a colander and rinse quickly under running water to stop the cooking process. Transfer the hot, washed noodles to a bowl.

While the noodles are cooking, prepare the sauce. Chop the peeled garlic and add it along with sugar to a bowl, into which then pour the soy sauce, add rice vinegar and sesame and canola oil, whisk lightly. Pour the prepared dressing into the noodles and mix well. Slice the green onion feathers diagonally and sprinkle on the noodles.

To such noodles, you can add fried beef or pork tenderloin, cut into thin slices, strips of toasted red bell pepper, boiled shrimp, shredded purple or Chinese cabbage

Chow mein noodles are a classic Chinese homemade dish. It is prepared in a very characteristic way only from egg noodles. You will need: – 250 grams of Chinese egg noodles; – 2 ½ tablespoons of vegetable oil; – 1 teaspoon of sesame oil.

Boil the noodles in 8 cups of boiling water. Drain through a colander, rinse with cool water and stir with one teaspoon of sesame oil. In a non-stick skillet, heat half the vegetable oil until lightly smoky. Lay out the boiled noodles and brush them with a spatula. Fry for about 5 minutes, without stirring, until the bottom noodles are golden brown, place a plate on top of the pan, holding it, turn over so that the noodles are in the plate, crust up. Pour the remaining oil into the skillet, reheat it, and gently transfer the noodles, allowing them to slide off the plate, crust up. Fry with a spatula. Chow mein is served with chunks of fried chicken, pork or shrimp.
