Hollandaise sauce: how to make it

Hollandaise sauce is similar to mayonnaise, and its name is not related to Holland – the recipe was invented in France. This feature shows only the idea of ​​the French themselves about foreign guests when serving French cuisine.

Unlike mayonnaise, hollandaise sauce is made with butter and served warm.

Sauce recipe

1. Combine 4 yolks and a tablespoon of lemon juice in a saucepan.

 

2. Place the mixture in a water bath. Add 120 grams of oil to the mixture in three steps and mix thoroughly until dissolved.

3. When the sauce is thick, remove from heat and season with salt and pepper.

To make the sauce more tender, you can beat the yolks until foamy at the initial stage, and add the butter already melted in a thin stream.

Hollandaise sauce goes well with vegetables and fish.
