Herring is one of the cheapest fish, but at the same time it has tasty aromatic fatty meat. Herring can be used to make a lot of dishes – from simple sandwiches to more complex pates, salads and pies.

You will need: – 100 g of salted herring; – 4 slices of black bread; – 1 processed cheese; – 8 pieces of very small potatoes; – a quarter of red sweet pepper; – dill; – 8 skewers.

Boil small potatoes in their skins, cool and peel. Cut the processed cheese into 4 slices. Place them on 4 slices of brown bread, sprinkle with finely chopped dill and cut diagonally. You should have 8 servings. Cut the salted peeled herring into pieces. Place one at a time on the sandwiches. Cut the red bell pepper into 8 small pieces. Take 8 skewers, pierce each with a piece of pepper, then a potato, and finally stick the skewers into the sandwiches, securing the pieces of herring and cheese. The sandwiches are ready. This appetizer is perfect for a feast with alcoholic beverages (vodka).

You will need: – 250 g of salted herring fillet; – 100 g of butter; – 1 apple; – 1 onion; – 5 eggs; – 1-2 stalks of green onions.

Keep the oil at room temperature until softened. Boil eggs, cool and peel. Peel and cut the apple and onion into wedges. Cut the salted herring fillet into pieces. Pass all the forschmak ingredients through a meat grinder. Stir and place on a plate. It is better to keep it in the refrigerator for an hour before serving.

To cleanse the eggs better, soak them hot in very cold water for a few minutes.

You will need: – 1 medium lightly salted herring; – 1 medium carrot; – 1 medium apple; – 3 small potatoes; – 1 tbsp. capers; – olive oil; – green onions; – parsley; – salt and pepper, curry to taste.

Boil potatoes and carrots in separate saucepans. Cool and peel, then cut into cubes. Cut the peeled salted herring into pieces. Chop the parsley and green onions. Peel and cut the apple into thin slices. Combine potatoes, carrots, herring, apple, capers and herbs. Toss and add salt, pepper and curry to taste. Season the salad with olive oil.

Herring fried with mustard

You will need: – 2 medium fresh herring; – 2 tbsp. chopped dill; – 3 tbsp. mustard; – 1 tbsp. lemon juice; – vegetable oil for frying.

Peel and gut fresh herring, remove head and fins. Wash and dry with tissue. Combine mustard, chopped dill and freshly squeezed lemon juice in a cup. On the carcass of each herring, make several shallow cuts, salt the fish inside and out, and then brush with mustard mixture. Fry in vegetable oil until tender. Serve with chips, mashed potatoes, or salad. Mustard herring can also be baked in the oven.
