Halibut: how to fry fish? Video
Fried halibut is incredibly tasty. Its meat is tender, soft and aromatic. But for it to really turn out like this, you need to be able to properly fry halibut. This can be done in several ways.
Features of frying halibut
Halibut itself is very fatty and, moreover, strongly absorbs the fat in which it is fried. Therefore, the meat can literally fall apart in the pan during the cooking process. To avoid this, place the fish on a very hot surface and use a little oil, then a golden brown crust will quickly appear, which will save the appearance of the dish. At the same time, never cover the pan with a lid, otherwise you will not get fried, but stewed halibut. If you still fail, fry the fillets in batter.
Use cast iron pans, they allow you to fry halibut until golden brown without turning the fillet into porridge
You will need: – 2 fillets of 200 g each (without skin); – lemon; – 20 g butter; – olive oil for frying; – salt and pepper to taste.
Thaw halibut fillets, rinse and pat dry with a kitchen towel. Season with salt and pepper to taste. Squeeze the lemon juice and drizzle over the meat. Place the non-stick skillet over the fire, pour in the olive oil and heat very well.
Place pieces of prepared halibut in hot oil and fry until golden brown. This will take approximately 2-3 minutes. Then add a piece of butter to the pan, and when it is almost melted, immediately turn the fish over to the other side. This technique will improve the taste of the finished dish.
Fry until the second side of the fillet is browned, then remove the pan from the heat and shake for 30-40 seconds on the weight in a circular motion, while the oil will still bubble and the fish will fry. Place the halibut on plates, but do not serve immediately; the fillet should “ripen” for 5 minutes. The fish turns out to be tender and juicy, but, most importantly, at the same time whole.
You will need: – 500 g of halibut fillet; – 3 eggs; – 200 g of flour; – a glass of milk; – vegetable oil for frying; – salt and pepper to taste.
Defrost and wash halibut fillets, then remove excess moisture with a towel. Cut into portions, season with salt and pepper to taste. Beat eggs with salt. Add flour and milk and stir. This will be the batter.
You can also prepare the bread crumbs and after the batter, roll the fish pieces in them.
Preheat a skillet with vegetable oil very well. Take fillet pieces, dip them in batter and fry until golden brown on each side. The fish is tasty and appetizing. Serve halibut with potatoes or fresh vegetables.
