Green beans with egg, recipes. Video
Leguminous vegetables are famous not only for their amazing taste, but also for their incredible health benefits. They can be eaten in any form by adding other ingredients to the dishes. The culinary duet of green beans and eggs is very successful. This food contains everything the body needs – plant and animal protein, fiber and vitamins.
Green beans salad with egg
Ingredients: – 500 g of fresh green beans; – 2 chicken eggs; – 50 g butter; – 150 g mayonnaise; – salt.
Place the eggs in a saucepan or stewpan, cover them with water, place over medium heat and simmer for 8-9 minutes after boiling.
To prevent the eggs from bursting during cooking, add a teaspoon of vinegar to the water. Cool them for a few minutes in cold water, then it will be easier to separate the shell.
Place another heat-resistant container on the adjacent hotplate, fill it halfway with water and boil the liquid at maximum temperature. Rinse the beans well, cut off the stalks and tough cuttings. Cut the pods into oblong pieces no more than 5 cm long, throw them into a saucepan, after salting the bubbling water. Boil the legume vegetable for 10 minutes.
Let the eggs cool, peel, dry with a paper towel and chop finely with a special or regular knife, or simply mash with a fork. Discard the cooked beans in a colander and shake several times to remove any excess liquid.
Melt the butter in a skillet and fry the soft pods in it for 5 minutes until light golden brown over medium heat. Combine the prepared dish ingredients in one bowl, season them with mayonnaise, gently stir the salad and add salt if necessary.
Georgian Egg Bean Recipe: Green Lobio
Ingredients: – 400 g fresh green beans; – 1 chicken egg; – 1 onion; – 2 tomatoes; – 1 clove of garlic; – 80 g of cilantro; – a pinch of ground black pepper; – a small pinch of red pepper; – salt; – vegetable oil.
You can also use frozen beans for the recipe. In this case, take the cut product immediately, since it is undesirable to defrost it for slicing.
Prepare fresh beans as described in the previous recipe. Dip it in boiling water with salt dissolved in it and leave to simmer for 10-15 minutes. Peel the onion and garlic and chop. Fry them in hot vegetable oil until transparent, then add the coarsely chopped tomatoes.
Simmer the vegetables together for 4–5 minutes, then transfer the beans, chopped cilantro to them, pepper and salt to taste. Simmer the dish for another 5 minutes, covered over low heat. Crack a raw egg into a skillet, mix it quickly with the fried vegetables and remove immediately from the stove.
