two large grapefruits
Brown sugar – 1 cup
Vanilla – 2 tsp
Method of preparation
Remove the skin from the grapefruit and cut the red flesh into pieces (be sure to remove as much of the white, soft part of the fruit as possible).
Get rid of the seeds.
Combine the sliced grapefruit (and juice from the peeling process), vanilla and sugar in a medium saucepan, mix well, cover and bring to a boil over medium heat.
Reduce heat to medium, remove lid and simmer for 25-30 minutes. Stir occasionally.
Pass the prepared grapefruit mixture through a fine strainer.
Optionally, you can squeeze out the mixture with a spoon to get more liquid. Refrigerate and store in the refrigerator, in an airtight container or jar.

Finely grate the zest of 1 grapefruit and squeeze the juice of XNUMX grapefruits.
In a small saucepan, bring the grapefruit zest and juice, sugar and lemon juice to a boil. Boil 5 minutes.
Pour the mixture into a sterile container. Let cool, close tightly and refrigerate.
