Low-alcohol infusion of grapes

When making this drink, it is important to remember the golden rule of the winemaker: the berries are by no means washed!

Otherwise, you will kill the wild yeast on the skin of the fruit, which is necessary for effective fermentation.

Ingredients

  1. Grapes – 2 kg

  2. Sugar – 500-750 g (depending on the level of sweetness of the grapes)

  3. Water – 500 ml

Method of preparation

  1. Pick the berries from the ridges and carefully sort out (rotten grapes will irrevocably spoil the taste of the drink).

  2. Make syrup from water and sugar.

  3. Lightly mash the berries in a three-liter jar and pour them with cooled syrup (the level of sugar solution should exceed the grape mass by about 3 centimeters).

  4. Tie the fermentation container with gauze and place it in a dark, dry place with a temperature of 18-25 ° C before fermentation begins (if the substance has not fermented on the third day, add a few crushed grapes or a handful of raisins to it).

  5. As soon as the process has begun (observed: foam, hissing and the presence of a sour smell), close the jar with a lid with a water seal or pull on its neck a familiar rubber medical glove with a tiny hole in one of the fingers.

  6. Then, return the container to a dry, dark place and keep it there until the fermentation is complete (i.e., a month and a half).

  7. When the glove falls off or bubbles finally stop coming out of the water seal, strain the substance through a dense cotton-gauze filter and bottle it.

  8. Store the finished drink in the cellar or refrigerator.

Isabella grape liqueur with vodka

Attention! By the same principle, grape liqueur is prepared for alcohol. But we do not recommend doing it on moonshine.

Even the highest quality homemade distillate can significantly change the taste of a grape drink, and not for the better.

Ingredients

  1. Grapes – 1,5 kg

  2. Vodka or 45-degree water-alcohol solution – 500 ml

  3. Water – 250 ml

Method of preparation

  1. Prepare the liqueur according to the technology indicated in the previous recipe.

  2. Then, mix it with vodka or a water-alcohol solution, adding a little more sugar if necessary.

  3. Keep the result for five days in a dark, dry room.

  4. Then carefully filter the liquor and bottle it.

  5. The storage place for the drink, as in the previous case, should be a cellar or refrigerator.

Grape juice infusion

And in this case, the same Isabella remains a win-win option.

Ingredients

  1. Grapes – 2-2,5 kg

  2. Vodka or 45-degree water-alcohol solution – 500 ml

  3. Granulated sugar – 500 g

Method of preparation

  1. Squeeze out the juice from the washed and sorted grapes, strain it and hold it in a saucepan on the fire until vaporization begins.

    During this time, you need to have time to dissolve all the sugar in the heated juice.

  2. Remove liquid from heat and cool to room temperature.

  3. While the substance is cooling, wash and dry the bottles intended for the future drink, and fill them a quarter with strong alcohol.

  4. Add grape juice to them, cork tightly, shake well and send to a cool, dry place.

  5. It is advisable to drink the drink within three to four months.

Classic grape liqueur

Ingredients for a XNUMX liter bottle

  1. Dark grape berries – 2 kg

  2. Sugar – 700 g

Method of preparation

  1. Wash ripe grapes and let the water drain. Separate the berries from the ridges and remove the rotten ones.

  2. Pour the prepared grapes into a bottle, sprinkling with sugar.

  3. Having tied the neck of the bottle with gauze, put it in a warm place until signs of fermentation appear.

  4. After that, remove the gauze, install a water seal and hold for 20–25 days until the fermentation stops completely.

  5. Then drain the liqueur, squeeze out the pulp, filter everything, bottle it and cork it.

  1. Vodka – 1 l

  2. Grape juice – 1 l

  3. Sugar – 1 kg

  4. Dry tea – 10 g

  5. Bay leaf and black pepper grains – 5 pcs.

  1. Mix vodka with grape juice, add sugar and stir until dissolved.

  2. Pour spices, mix again and leave for 5-6 days, shaking daily.

  3. Strain, bottle for storage.

Black grape liqueur

Ingredients

  3. Berries of black large grapes – 1,5 kg

  4. Sugars – 500 g

Method of preparation

  1. Rinse the berries, dry well and, cutting each in half, remove the seeds.

  2. Put in a large glass jar, fill the berries with alcohol to the top.

  3. Tie the jar with a thick cloth, leave for 35-40 days.

  4. Filter the liquid, cover the remaining berries with sugar and pour water. Cook, stirring, 10 minutes, cool.

  5. Filter thoroughly, mix with the expressed liquid, you can strain again and pour into bottles for storage.

Ingredients

  1. Fresh grape juice – 1 l

  2. Sugar – 1 kg

  3. Black tea – 1 tbsp. l.

Method of preparation

  1. Mix all the ingredients in a bottle, close and infuse for 5-6 days, shaking regularly.
