In fresh form, rather sour and inexpressive gooseberries are a berry for an amateur. But when it appears in the composition of spiritual Eastern European liqueurs of various strengths, the number of such lovers grows exponentially.

The simplest gooseberry liqueur
In addition to the ease of preparation, the proposed liqueur has a wide variability. If desired, the 25-degree drink provided for in the recipe can be made less strong by replacing the 70-degree alcohol with regular vodka. If you want to achieve a more dense result, you will need to reduce the amount of water. The amount of sugar can be increased according to your taste.
Ingredients
70-degree alcohol or well-purified moonshine of the same strength – 1 l
Ripe gooseberries – 1 kg
Sugars – 300 g
Water – according to the situation
Method of preparation
Sort the gooseberries, clean them from cuttings and other plant debris, and then wash them thoroughly. Put the berries in a three-liter jar and mash with a crush. Pour them with alcohol, close the lid tightly and leave in a warm, dark place for 10 days.
Drain the alcohol, strain, pour into a clean container, close tightly and hide for a while in a dark place.
Sprinkle the remaining berries with sugar and hold for 5 days on a sunny windowsill.
After the specified period, the resulting syrup should be filtered, squeeze the berries into it and add water so that the total volume of liquid is equal to a liter.
Thoroughly mix the resulting substance with the previously prepared alcohol tincture, strain well again and pour it into a clean jar again.
Hold a tightly closed container for about a month in a dry, dark place, from time to time, when turbidity or sediment appears, filtering the drink. The finished liquor should be bottled and stored in a cool, dark place.
Vintage gooseberry liqueur
It was possible to taste the liqueur prepared according to the recipe below already in the century before last.
Ingredients
60-degree alcohol or similar purified moonshine – 2 liters
Ripe gooseberries – 2 kg
Sugars – 600 g
Pure non-carbonated water – 2 l
Method of preparation
Sort the berries and free from vegetable excesses. If necessary, wipe them with a clean cloth, as washing will kill the wild yeast on the skin.
Fold the gooseberries in a three-liter jar, lightly crush with a wooden spoon, cover with sugar, cover with gauze and put in a dark, warm place.
As soon as fermentation begins (a sour smell and the first signs of foam appear), pour the berries with alcohol, close with a tight lid and leave for 3 weeks in a dark room at room temperature.
Next, pour the alcohol through the filter into another vessel, and pour water in its place.
Close the jar again with a lid and return for a week in a dark place at room temperature.
Then, drain the water, squeeze the berries into it, carefully filter and mix with alcohol (at this stage, you can add more sugar to the drink if you wish).
The result obtained is once again passed through the filter, bottled and sent for storage in a dark, cool room. At the same time, it is advisable not to touch the finished liquor for at least a month.
Polish gooseberry liqueur
As you can see, our western neighbors are no worse than we are in delicious alcohol.
Ingredients
Vodka – 1 l
Ripe gooseberries – 1 kg
Liquid honey – 0,5 l
Vanilla – 2 pods (or 2 tsp vanilla extract)
Ginger – 5 pcs. 0,5 cm in diameter
Method of preparation
Moved, devoid of cuttings and washed berries put in a jar, slightly crushed, add spices and pour vodka.
Close the jar with a lid and leave for a month in a dry, warm place, not forgetting to shake it from time to time.
Then, drain and filter the vodka, and add honey to the berries.
Keep a tightly closed container in the dark for another 2 weeks.
After that, drain the resulting syrup through the filter, squeeze the berries into it and mix with the alcohol base.
The result is filtered again, bottled and sent for a month in a cool dark room for final ripening.
Low alcohol gooseberry liqueur
Contrary to the opinion of a number of experts, we decided to attribute this drink, despite the absence of a pronounced alcohol component in it, to the category of liqueurs. This decision is supported by the density and sweetness of the drink, which distinguishes it from homemade wine.
Ingredients
Ripe gooseberries – 1 kg
Sugar – 1 kg
Water – 250 ml
Method of preparation
Sort the gooseberries and wipe if possible. Put the berries in a jar, mash with a crush, add sugar there and pour all this with water.
Tie the neck of the container with gauze and place the jar in a dark, warm place for 2-3 days.
When the first signs of fermentation appear, pull a medical rubber glove over the neck with a hole pierced in one of the fingers or close the container with a water seal (in the absence of fermentation, throw 50 g of unwashed raisins into the must and wait a couple more days).
Leave the substance prepared in this way in a warm, dark place for a month and a half. After the end of fermentation (precipitation, deflation of the glove or the absence of bubbles from the water seal), the drink should be removed from the sediment, passed through a dense cotton-gauze filter, bottled and hermetically corked.
This liqueur is best kept in the cellar. Moreover, it is in your best interest not to touch the drink for the next three months.
Gooseberry liqueur with apple or quince wine
Ingredients
Vodka – 750 ml
Apple or quince wine – 750 ml
Gooseberries – 1 kg
Sugars – 200 g
Method of preparation
Rinse and dry ripe berries. Then pour into a large jar, pour vodka, leave for 15 days.
Carefully drain the vodka, put in a cool place for a while. Pour the same berries with wine, let stand for 14-15 days, decant the tincture well.
Pour sugar into the liquid, put on fire, while stirring, bring to a boil 3-5 times, each time carefully removing the foam.
Mix with infused vodka, insist the mixture for another 5 days and pour into dry, clean bottles. Well clog.
Gooseberry liqueur with white wine
Ingredients
Gooseberries – 1 kg of ripe gooseberries
Sugar – 1 glass
Vodka – 750 ml
Dry white wine – 750 ml
Method of preparation
Pour sweet gooseberries into a bottle, pour vodka and leave for 2 weeks.
Then drain the infusion, and pour the gooseberries with wine and let it brew. After 6-8 hours, drain the wine, mix with the infusion in an enamel saucepan, add sugar, bring to a boil, remove the foam and set aside from the fire.
Do this 4 more times, each time removing the foam. Filter the cooled liqueur, pour into bottles and cork. Store in a cool place.
