But, the most important task of antioxidants can be considered protection from free radicals. These are particles that can damage DNA, provoke the occurrence of many diseases and accelerate the aging process.
Gooseberries can be eaten in any form – raw, in the form of jams, preserves, jellies, desserts. Fruit puree, jam, compotes, and even tinctures are prepared from it. The pectin and antioxidants found in these berries are not overly sensitive to heat.
Therefore, during cooking and baking, these substances retain most of their valuable properties. But the real irony of fate is that gooseberries are now less popular and less available than exotic bananas or mangoes.
