The history of honey goes back more than 10 thousand years, and since ancient times people attributed healing and even miraculous properties to it, believing that its use reveals to us the knowledge of the essence of things and can even help to gain immortality.

Well, success in striving for eternal life is probably worth waiting for, but the excellent antiseptic, bactericidal, tonic, softening and healing properties of honey are already indisputable. Honey is also the most effective and tastiest winter cough remedy…

Its therapeutic properties are explained by its chemical composition: it contains a sufficient amount of mineral salts that have a beneficial effect on metabolism, and all the necessary vitamins. About 80% of honey consists of carbohydrates that are easily absorbed by the body, so it provides us with energy without sad consequences for the silhouette and is indispensable in winter as a means of combating fatigue and colds. In addition, honey is an excellent remedy for bronchitis. It is also rich in calcium, magnesium, phosphorus and sulfur.

In cooking, honey can be used in the preparation of sauces, for example, to soften the taste of onions. It is useful to note that it is one and a half times sweeter than sugar – that is, 100 g of honey is equivalent to 150 g of sugar.

There is an incredible number of varieties of honey of various colors, flavors and aromas. When buying it, as well as all other products, you should be guided by the right rule: better less, but better. But gourmet pleasure is guaranteed!

Red onion tartlet with honey

For 2–4 persons

Prepare: 10 minutes

Preparation: 20 minutes

  • 2 large red onions
  • 1 pack of puff pastry
  • lightly salted butter
  • 4 tbsp. l. acacia honey
  • Fleur de sel sea salt

Preparation

Peel the onions from the peel, cut off two circles about half a centimeter thick in the middle of each. Cut out four 8 cm discs from the puff pastry. Take baking molds (about 7 cm in diameter), melt a little butter in each, put a circle of onion on the bottom. Top with a circle of puff pastry, tucking its edges. Place in a preheated oven at 180°C and bake for 16-20 minutes until golden brown. After removing from the oven, turn the tartlets onto a warm plate; before serving, pour over slightly warmed honey and salt a little.

Harlequin salad with sweet and sour sauce

For 4 persons

Prepare: 30 minutes

Preparation: 6-8 minutes

  • 4 small carrots
  • 4 radishes
  • 4 small turnips
  • 1 small beet

For sweet and sour sauce:

  • 2 Lime
  • 4 tbsp. l. acacia honey
  • 9 Art. l peanut butter
  • Fleur de sel sea salt
  • finely chopped green onion

Preparation

Boil all the vegetables separately in lightly salted water, except for the radish – it should remain raw. Drain, cool, then carefully peel them off. In a bowl, mix honey and lemon juice. With a mixer, beat the sauce like mayonnaise, gradually adding peanut butter. Cut the vegetables lengthwise into four parts, and the radish into thin circles. On each plate, place a spoonful of sauce, put the cooked vegetables, and then the radish. Season with salt and a little green onion.
