Preparations for the holidays take place on many levels. Christmas cleaning, decorating the Christmas tree, shopping … However, a large part of our time is consumed by the culinary part, which is already beginning to remind us that Christmas is just around the corner.

The key element of Christmas preparations is making gingerbread cookies. Cutting dough in various shapes with molds is a pleasant proposition for spending a winter evening with your loved ones. Baking gingerbread gives the home a pleasant aroma, announcing the upcoming holidays. But why do we owe this wonderful, characteristic scent of gingerbread? First of all, the spices in them. Due to the often accompanying shortage of time, the producers offer us a ready-made mixture of spices contained in one package. However, are we sure what is in it? In addition to the traditional blend of cloves, cinnamon, ginger, nutmeg and other aromatic ingredients contained in the “gingerbread spice”, we also have added sugar.

The ready-made spices themselves will not provide us with such an intense flavor as freshly ground, prepared by hand, which I encourage you to do. In addition to the guarantee of an even more intense aroma, we can choose the ingredients according to our preferences. My suggestion for Christmas gingerbread spice is:

• 4 teaspoons of ground ginger • 2 teaspoons of ground cinnamon • ½ teaspoon of ground nutmeg • XNUMX/XNUMX teaspoon of cloves

In order to crush and combine all the spices, I used a mortar. It didn’t take long for the intense aroma to spread throughout the apartment. I also rubbed the orange zest into the dough, which gave it an interesting, fresh taste.
