Ginger beer “Lemon-yeast”

The fermentation container must first be washed and sterilized. Instead of lemon, you can use lime juice or include spices (cloves, anise).

Ingredients

  1. Sugar – 1 glass

  2. Ginger root – 50 g

  3. Lemon juice – ½ cup

  4. Dry yeast – ½ tsp

  5. Water – 2 L

Method of preparation

  1. Peel the ginger, chop with a grater, put in a glass vessel.

  2. Mix yeast and sugar with ginger mass.

  3. Add lemon juice to the mixture and mix all the ingredients thoroughly.

  4. Pour water into the resulting slurry, put the container in a warm place for fermentation.

  5. After 2 days, strain the drink and distribute it in bottles.

Ginger beer with raisins

It is better to use a sterilized glass jar as a fermentation container.

Ingredients

  1. Ginger – 0,2 kg

  2. Lemon – 2 pcs.

  3. Sugar – 3 cups

  4. Raisins – ½ cup

  5. Water – 4 L

Method of preparation

  1. Cut off a small piece of ginger root (about 2 cm), peel it from the skin, chop with a grater to get 1 tbsp. l. pulp.

  2. Squeeze juice from 1 lemon into a jar, throw in the same citrus pulp, raisins and ginger gruel.

  3. Pour the mixture with 2 cups of water, cover the vessel with a gauze cloth, leave warm.

  4. After 3 days, “feed” the drink with 2 tsp. sugar and 1 tsp. grated ginger, mix thoroughly with a sterile spoon.

  5. Introduce “feeding” daily for 1 week, strain the liquid on the 10th day.

  6. Prepare syrup by dissolving 2 cups of sugar in 0,6 liters of boiling water, add it to the drink.

  7. Squeeze the juice of the second lemon into the remaining water, dilute the ginger beer with this liquid.

  8. Stir the drink, pour into small containers, let it ripen in the refrigerator for 4 days.

Wine based ginger beer

If desired, you can sweeten the drink with powdered sugar and / or dilute with citrus juice (from half a lime or lemon).

Ingredients

  1. Ginger – 30 g

  2. White wine – 0,2 l

  3. Water – 4 L

  4. Dry yeast – 15 g

Method of preparation

  1. Grind ginger, ceiling, combine with sugar.

  2. Boil water, cool slightly, add to the ginger mass.

  3. Wait for the liquid to cool down to 30 ° C, add yeast.

  4. After 2-3 hours, pour the ginger drink into a fermentation tank and install a water seal.

  5. Wait 2 days, pass the beer through a gauze filter, add wine, bottle, cork, place in the refrigerator.

  6. Taste after 1 day.

Classic non-alcoholic ginger beer

Pepper can be replaced with 1 bay leaf or any spices to taste, sugar with honey.

Ingredients

  1. Ginger – 0,4 kg

  2. Cane sugar – 1,5 cups

  3. Lemon – 2 pcs.

  4. Black peppercorns – 8 pcs.

  5. Sparkling water – 2 l

  6. Plain water – 4 cups

Method of preparation

  1. Peeled ginger root grate or finely chop.

  2. Cut off the top skin of citrus fruits.

  3. Pour non-carbonated water into a suitable pan, throw ginger mass, pepper, zest into it.

  4. Boil the mixture, boil under a closed lid for 10 minutes over low heat.

  5. Sweeten the liquid with sugar, mix, cook for another quarter of an hour with the lid open.

  6. Pass the drink through a cloth, let it cool, pour into bottles, filling them ¼ of the volume.

  7. Dilute the concentrate with carbonated water, adding it to the bottles almost to the top, leaving only the neck free.

Non-alcoholic ginger beer “Express”

If desired, mint and pepper can be replaced with cloves (1-2 buds) or herbs to your taste.

Ingredients

  1. Lemon – 2 pcs.

  2. Ginger – 0,3 kg

  3. Brown sugar – 1 cup

  4. Peppercorns – 6-7 pcs.

  5. Mint / Melissa – 1-2 sprigs

  6. Mineral water – 2 l

Method of preparation

  1. Squeeze juice from lemons, grind ginger and zest with a grater.

  2. Dissolve sugar in citrus juice, add ginger-lemon mass, pepper and mint to it.

  3. Pour the mixture with mineral water, let the drink stand for at least half an hour.

  4. Strain the beer, pour into a bottle, cool and taste.
