Easter is a wonderful family holiday that brings so much kindness, warmth and happiness to our homes. Many housewives start preparations in advance to make everything on time. What is Easter without homemade cakes? Combine in a bowl 25 g of live yeast, 2 tbsp. l. flour and sugar, 100 ml of warm milk and leave for half an hour in the heat. Separately mix 3 eggs, 250 g of butter, another 200 g of sugar and 100 ml of milk. We introduce the sourdough into the resulting mixture, cover it with a towel and let it grow for an hour.
Then gradually add 800 g of flour, 150 g of raisins and knead the dough. The KENWOOD kitchen machine with a hook attachment will cope with this task in record time. Meanwhile, whisk the sweet glaze of 2 whites and 200 g of powdered sugar. Do you want to surprise your family at Easter with something unusual? Bake a delicious Italian panettone cake. We start, as always, with sourdough. Mix 1 tablespoon of dry yeast and sugar, pour 60 ml of milk and leave for 30 minutes. Soak 150 g of raisins in 50 ml of rum for a while, while the dough is being prepared.
Beat 100 g of butter with 200 g of sugar, in turn, enter 2 eggs, 4 yolks and 120 ml of milk. So that the mass is thoroughly mixed and the sugar begins to dissolve, the main thing is to beat it at high speed, without changing the direction of mixing. Here, the whisk attachment for the kitchen machine will be indispensable. Next, add 700 g of flour with a pinch of nutmeg and cloves and carefully knead the dough. Here again, the hook attachment will help us. It is ideal for working with capricious yeast dough. In addition, it allows you to delicately mix additional ingredients, such as candied fruits and raisins. Adding 100 g of dried raisins and candied fruits to the dough, we remove it in the heat for 1.5 hours. Then we distribute the dough into the molds and bake the cakes for 50 minutes at 180°C.
You can deviate from the canon and make a pistachio glaze. We grind 100 g of peeled pistachios into the smallest crumb. The multi-grinder attachment will allow you to do this much faster and better than if we crushed pistachios manually.
Separately, whisk 150 g of sour cream with 70 g of sugar. This task is again entrusted to the whisk attachment for whipping. It easily and quickly whips up a surprisingly airy delicate glaze. You will have to cover it with ready-made cakes and decorate them with pistachios.
The main curd symbol
Cottage cheese Easter is another constant attribute of the festive table. First of all, wipe 800 g of fresh fat cottage cheese. In order not to waste a lot of time and effort, use the KENWOOD kitchen machine with a sifting and wiping nozzle. She will very quickly and thoroughly wipe the cottage cheese, saturating it with oxygen, so that your Easter will turn out to be extremely tender and soft.
Add 200 g of fat sour cream, 150 g of sugar and 3 egg yolks to the mashed cottage cheese, whisk vigorously until a homogeneous consistency is obtained. Carefully mix the whipped whites and cream into the curd base. Real cooks know how hard it is to maintain the volume of proteins when introducing a different mass. Easter cookies with chocolate patterns can be presented as a small gift to friends, colleagues or children. Mix 600 g of flour, 2 tbsp. l. cocoa, 0.5 tsp. soda, ¼ tsp.cardamom, cinnamon and ginger. In a separate container, whisk 100 g of softened butter, 100 g of sugar and 2 eggs. It is best to use a K-shaped mixing nozzle. It completely eliminates the possibility of settling of the sugar mixture and allows you to get a shortbread dough of optimal consistency. Continuing to knead the dough, we introduce a dry flour base and 120 g of liquid honey.
The orange zest will add subtle citrus notes to the liver. Adding fresh zest to the elastic dough, form a ball from it and put it in the refrigerator for a couple of hours. Then roll out the layer with a thickness of 5-6 mm, cut out shaped molds in the form of different animals cookies and bake in the oven for 10 minutes at 200°C.
This time is quite enough to melt separately in a water bath for 70 g of dark and white chocolate and fill them with cornets. We paint warm cookies with chocolate topping and let the patterns freeze properly. An interesting Easter treat is ready!
Opening day in an eggshell
Painted eggs were and still are a constant symbol of Easter. Following the precepts of our wise grandmothers, you can paint them with onion husks, adding a small touch to the traditional method.
For a liter of water, we will need the husk of 20 bulbs. Boil it for half an hour on low heat, insist 15 minutes under the lid and filter. Separately, soak large leaves of parsley or any other greens in clean water for 5 minutes. Tightly apply them to the shell, tighten with nylon and in this form we cook hard-boiled in onion broth. The eggs will turn brown, and a plant pattern will appear on their surface.
Decorate eggs with fudge will help scraps of silk fabric. This may be an unnecessary handkerchief or tie. We cut out a fragment with a beautiful pattern and tightly wrap it around the raw egg so that the front side fits to the shell. We sew the fabric at the joint, wrap it in cotton fabric and firmly fix it on the blunt end. Add 3-4 tablespoons of vinegar to a saucepan with water and cook hard-boiled eggs. As a result, the eggs will show off exactly the same pattern as on the silk fabric.
