A bit of history

According to legend, the basis of the wine was laid by the French winemaker Antoine Mossano, who arrived in Georgia at the end of the XNUMXth century by order of the Imperial Court. His task was the production of wines according to French technology. The task is no doubt difficult, but crowned with success. As a result, one of his creations, Teliani wine, was admitted to the table of Nicholas II.

In the middle of the XNUMXth century, Mossano’s developments were used to create a new variety of wine produced by the Teliani Valley factory. The result of this union of old traditions and new technologies was “Tvishi”. The name of the wine was given by a small village, from where the grapes are delivered to create it.

Tvishi gained worldwide fame already in the era of independence. A special law of Georgia not only secured the name for it, but also severely limited the zone of origin of raw materials. So, if you see a bottle of such wine from the grapes of Kakheti or Imereti, feel free to put it back. The real “Twishi” here does not smell.

The basis of the drink is the Tsolikauri grape variety, which is harvested exclusively in the area of ​​the village of Tvishi, the heart of the wine-growing zone of the same name. The special climate of the Riola Gorge gives the fruits a unique taste. And subsequent production cuts it, turning it into a real diamond.

The production technology combines the foundations of the Racha-Lekhum method for the production of naturally semi-sweet wines and modern technologies. Hand-picked grapes are pressed, filtered and cleaned, and then the resulting must is poured into stainless steel tanks. There the wine ferments for several months before being bottled.

An important point, after the wine is bottled, the drink is pasteurized. Thanks to this, the wine does not turn into vinegar right on the store shelves. The reverse side of the coin – do not try to turn an ordinary Twishi into an aged one by hiding the bottle in the back of the cabinet. It’s completely useless.
