When choosing, first of all, you need to pay attention to the ratio of saturated, monounsaturated and polyunsaturated fats in its structure. This determines the suitability for frying in relation to the excreted carcinogens.

You should also look at the smoke point. This is the heating threshold, having crossed which, substances harmful to the body begin to be released. The use of carcinogens leads to the formation of malignant tumors and other diseases. Frying is safer when the smoke point is as high as possible.

If the oil contains more polyunsaturated fatty acids than the rest, then it is healthier in its raw form. If monounsaturated and saturated, it is safer when cooked. The temperature on the surface of the pan during frying – 120-180˚

The ratio of acids in the composition of oils / saturated / monounsaturated / polyunsaturated / smoke point / and their distribution in order of benefit:

  1. Coconut – 87g / 6g / 1,8g / 232˚. Ideal for frying compared to other vegetable oils.
  2. Ghee is a product of butter processing. It is produced by heating, which results in the formation of milk protein, which is stripped off after it has appeared. After that, creamy fat remains. The smoke point from this process rises and becomes 205˚.
  3. Mustard – 12g / 59g / 21g / 254˚.
  4. Peanut – 10g / 24g / 14g / 230˚.
  5. Rice bran – 20g / 39g / 35g / 220˚.
  6. Creamy – 51g / 21g / 3g / 160˚.
  7. Olive – 14g / 73g / 11g / 160˚ is more suitable for consumption raw. Since during heat treatment, it will lose most of its useful properties.

For comparison, the ratio of acids in sunflower oil is 13g / 46g / 36g / 107˚. It has a low smoke point, which leads to the release of carcinogens when frying in a pan. Therefore, it is necessary to analyze the amount of consumption of harmful substances in fried foods.

Try sometimes to change the sunflower oil for a healthier one. It is better not to fry in linseed oil, add it to salads and cereals.

Crude and refined oil

Refined – purified from most impurities (from useful ones too). It is pure vegetable fat, practically odorless, the taste is weak. Ideal for frying, stewing and roasting.

Unrefined is a natural pomace with various impurities. It contains the largest amount of vitamins, minerals and other nutrients that the human body needs. Has its own specific taste and smell. It is not recommended to subject it to heat treatment – all its usefulness is lost!

The most useful is the crude sunflower oil of the first extraction, which is subject only to filtration. It completely retains the beneficial components. It has a pleasant taste and smell, but it becomes bitter and cloudy during long-term storage.

The most popular way of using vegetable oil in folk medicine is its resorption. Resolve daily in the morning and evening for 10 minutes. a tablespoon of unrefined vegetable oil in the mouth.
