To cook stuffed peppers for 3-4 people, you will need the following products:
- frozen bell pepper – 10 pcs. or 1 kg
- minced meat (pork and beef) – 400 g
- rice – 100 g
- onions – 2 pcs.
- carrots – 1 pcs.
- vegetable oil – 2 tablespoons
- tomato – 1 pcs.
- fresh greens
- ground black pepper
- cream – 100 g
- salt
How to make stuffed peppers
Pour 3 cups of water into a saucepan, place it on the stove. When the water comes to a boil, drop the rice into it and boil it until half cooked for 10 minutes over low heat. Peel the onions and carrots. Chop the onion finely, grate the carrots on a coarse grater. Hold the tomato for 10-15 seconds in boiling water, then remove and remove the skin from it, cut into small pieces, put in a small cup.
Heat a skillet well, pour the vegetable oil over it and fry the onions until golden brown. Then put the carrots in the skillet and blanch them with the onions for another 4-5 minutes. Transfer 2/3 of the onions fried with carrots to a bowl, and put the chopped tomato in a pan and fry it with onions and carrots, stirring constantly, for another 3-4 minutes. This will be the dressing for the broth in which the stuffed peppers will be stewed.
You can freeze the peppers yourself. Peel and wash fresh peppers, cut off the top of each with a tail, remove the core and seeds. Place the peppers in a plastic bag, seal tightly and place in the freezer
Put the minced meat in a bowl with fried onions and carrots and add boiled rice. Chop finely fresh herbs and place them in a bowl too. Season with salt and pepper, knead the minced meat well.
Remove the frozen bell peppers from the freezer. You do not need to defrost it, you can cook it right away. Stuff each with a teaspoon of prepared minced meat. Place them in a saucepan and cover with hot water so that it barely covers the peppers. Add a little water, toss the bay leaf into the pan and put the contents of the pan on top – the fried vegetables. Place the pot on the stove.
When the contents of the pot boil, reduce heat and simmer the peppers over low heat for 25-30 minutes. Then remove the pot from the stove. Let the peppers sit for another 10 minutes so that the meat is better saturated with their aroma, and serve them on the table. When serving, place a spoonful of sour cream on each pepper and sprinkle with chopped fresh herbs.
