Cauliflower is a healthy vegetable suitable for dietary and baby food. It is prized by health food aficionados for its low calorie content and delicate taste. Indulge in this product and make a delicious puree soup, mouth-watering cutlets or frozen cauliflower casserole.
Defrost the cauliflower before cooking in one of the following ways: – leave at room temperature for an hour and a half; – fill with hot water for 15 minutes and discard in a colander; – blanch in boiling water for 2-3 minutes; – put in a mold, put in the microwave and turn on the defrost mode for 2 minutes.
Cauliflower soup with cheese and mushrooms
Ingredients: – 400 g frozen cauliflower; – 20 g of dry mushrooms (better than white ones); – 3 potatoes; – 1 carrot; – 100 g of processed cheese; – 300 ml of milk; – 2 bay leaves; – salt.
Pour boiling water over the mushrooms and leave for an hour. Cut the cauliflower, carrots, and peeled potatoes into small pieces. Transfer them to a saucepan, pour in 1,5 liters of water, bring it to a boil, reduce heat and put bay leaf on the vegetables. Cook them for 20 minutes, then remove the lavrushka and puree the soup. Pour the water out of the mushrooms, squeeze out the excess liquid remaining in them, cut into slices and put in a saucepan. Boil milk, add shredded processed cheese and add to soup. Season with salt to taste and cook for another 10 minutes, then remove from heat and serve on bowls.
Ingredients: – 1 kg of frozen cauliflower; – 4 tablespoons flour; – 2 chicken eggs; – 2-3 sprigs of dill; – 1 tsp without a slide of fine salt; – a pinch of ground black pepper; – vegetable oil.
Minced meat for cutlets will turn out to be quite crumbly, but do not worry, they will not lose their shape when frying.
Place the cauliflower in a saucepan, pour 1,5 liters of water, salt and heat over high heat. When the liquid boils, mark 7 minutes and cook the cabbage until half cooked, then drain the liquid and cool the inflorescences. Chop the cabbage into small pieces with a knife, combine in a deep bowl with beaten eggs, chopped dill and pepper. Pour flour into the vegetable mixture and stir. Heat the vegetable oil and put the minced cabbage in it, picking it up with a tablespoon and forming oval patties. Fry them for 2-3 minutes on each side until golden brown.
Ingredients: – 500 g frozen cauliflower; – 1 onion; – 150 g of hard unsweetened cheese; – 1 glass of 20% cream; – 50 g bread crumbs; – 25 g butter; – salt.
Remove the husks from the onion and cut into small cubes. Place the butter in a hot skillet or saucepan and fry the chopped onion in it until transparent. Divide the cauliflower into florets and chop coarsely. Put it in a frying pan next to the onion, pour in the cream, sprinkle with a couple of pinches of salt and simmer over medium heat for 15–20 minutes. Preheat oven to 200 ° C. Transfer the creamy vegetable mixture to a round baking dish, sprinkle evenly with breadcrumbs and grated cheese, cover with foil and bake for 10 minutes, then remove the foil and bake the same amount until a delicious golden crust.
