Secrets of preparing squid
When shopping for frozen squid, look at the color of the meat underneath the outer skin; it must be white, and the skin itself can be of different shades – from pink to purple. Also, make sure that the carcasses can be easily separated from each other. If they stick together, this may indicate that the product has already been defrosted.
The smaller the carcass, the tastier and sweeter the meat will be.
Now, to peel the freshly frozen squid, pour boiling water over it and the film that covers the meat will curl up, so you can easily remove it with your hands. If the squids are thawed, just fill them with hot, but not boiling water and leave for 3 minutes. Then remove the skin. Take out and remove the transparent chitinous plates from the inside.
Now the squid must be boiled properly. To do this, boil water, add spices (bay leaf, peppercorns) to it. Dip the carcasses in boiling water, cover and turn off the gas. They will be ready in 10 minutes. Now you can start frying the squid.
Delicious Fried Squid Recipes
To cook fried squid in dry white wine, you will need: – 800 grams of squid; – 3 tablespoons of vegetable oil; – 1 carrot; – 5 tablespoons of dry white wine; – ¾ glass of chicken broth; – green onions.
Cut the boiled squid into strips. Heat oil in a frying pan or cauldron, add chopped onions and finely grated carrots and sauté for 5-7 minutes, stirring constantly. Then add the chicken broth and simmer for about 2 minutes. Now place the squid, fry for about 1-2 minutes and serve.
To cook garlic squid, you will need: – 100 grams of bacon; – 6 cloves of garlic; – 800 grams of squid; – parsley greens; – pepper and salt.
Cut the bacon into small pieces. Chop the garlic. Cut the boiled squid into strips. In a dry skillet, fry the bacon until golden brown, add the garlic and increase the heat. Fry briefly, about 30 seconds, then remove the bacon and lay out the squid. Cook for 3-4 minutes, then put the bacon back in the pan and stir. Serve with herbs.
