Fried ice cream seems like a gastronomic miracle – a cold ball wrapped in a hot crusty dough shell. However, anyone can cook this culinary fairy tale, it is only important to choose in which style – Asian or Mexican – you will perform this “trick”.
Fried ice cream in asian style
Fried ice cream is a popular dish in Asian – Japanese, Chinese, Thai restaurants. Here this delicacy is prepared in a special type of batter – tempura. You will need: – 500 g of vanilla ice cream; – 1 cup wheat flour; – 1 chicken egg; – 1 cup of ice water; – 1 teaspoon of baking soda; – 1 teaspoon vanilla extract; – vegetable oil for deep fat.
Take a sheet of parchment, line it on a tray or large cutting board, and use a spoon that makes neat, pretty balls to lay out the ice cream. Place the treat in the freezer for an hour or more.
When the ice cream is ready, turn tempura. In a medium bowl, sift the wheat flour and baking soda, add the egg and whisk until light foam, add ice water and vanilla extract, knead into a smooth mixture. It is best to keep tempura in a bowl filled with ice.
In a deep fryer or saucepan, heat the oil to a light smoke. Dip scoops of ice cream in tempura and place in hot oil. When the batter turns golden, take out the fried ice cream with special tongs and place on paper towels that can absorb excess fat. Serve with powdered sugar and garnish with fresh mint leaves.
For a Japanese dish, ice cream with mat-cha, vanilla, red bean flavors is suitable.
Mexican fried ice cream recipe
In Mexico, ice cream is fried in cornflakes, cookie crumbs, and nut crumbs. Take: – 500 g of vanilla ice cream; – 7 cups of cornflakes; – 1 tablespoon of ground cinnamon; – 2 chicken eggs; – 2 tablespoons of granulated sugar; – 1 tablespoon of milk, 3,5% fat; – vegetable oil.
Put the ice cream in balls on a board lined with parchment, put in the freezer for several hours. Sprinkle the cornflakes from a bowl and grind with a crush, or you can put the cornflakes in a zip-fastened plastic bag and crush them with a rolling pin. Combine crushed cinnamon flakes. Remove scoops of ice cream and roll in corn crumbs. Return to freezer for 30-60 minutes.
You can replace cornflakes with any others, add nuts, coconut flakes to them
Whisk eggs, sugar and milk in a bowl. Remove the ice cream from the freezer again and dip each scoop in the egg and milk mixture and roll again in the crushed flakes. Refrigerate again for a few hours. Deep-fry the balls and serve with honey, chocolate or caramel sauce.
