Fried fish in dough: a simple solution. Video

The fish is often fried in batter to keep it juicy and tender. But fish fried in a dough with a thicker consistency will be no less tasty. This dish will be especially tasty if the fish pieces are pre-marinated with spices.

What fish to choose for cooking

For this dish, it is better to choose a sea fish that does not have bones. Fat varieties are especially tasty in this cooking option: telapia, sole, halibut. During the frying process, the dough is soaked from the inside with the delicate juice and aroma of fish, preserving a delicious crispy crust on the outside. But you can also fry cod, pollock, rasp or hake according to this recipe. But red fish – salmon or trout, is not cooked in this way, they turn out to be tastier if you just fry them or bake them in foil.

What products do you need

To fry fish in dough, take: – 500 g of fish fillets; – 2 tbsp. soy sauce; – ½ lemon; – fresh ginger root; – ground black pepper; – 1 tsp. olive oil.

For the dough you will need: – 4 eggs; – 1 glass of milk; – 10 tbsp. wheat flour; – salt; – 4 tbsp. vegetable oil.

Defrost the fish and rinse in cold water, dry the fillets with paper towels and cut into large pieces, put in a bowl. A piece of ginger root, about 1 cm, peel and grate on a fine grater. In a small cup, combine olive oil, soy sauce, lemon juice, grated ginger and black pepper. Pour this mixture over the fish, stir so that the pieces are soaked in the marinade. Cover the bowl with cling film and let stand at room temperature for half an hour or an hour.

Fish fried in dough can be served without a side dish – this dish will be quite satisfying.

Prepare the dough. Pour a glass of cold milk into a bowl, add a little salt. Break the eggs, separate the whites from the yolks. Stir the yolks in a separate bowl and add to the milk, mix everything with a whisk. While stirring, add flour in portions and knead the dough. Beat the proteins with a blender or mixer until stiff, until peaks. Stir the dough in a circular motion in one direction and stir in the whipped egg whites. The consistency of the dough should resemble thick sour cream.

For fish fried in dough, you can serve sour cream sauce with garlic, herbs and pickled cucumber grated on a fine grater

Preheat a skillet and pour oil into it. Wait for it to warm up well too. Take a bowl of fish and, dipping each bite into the dough so that it covers the fish on all sides, place them in the pan. You do not need to fry the pieces for a very long time – 3-4 minutes on each side, until the dough is covered with a golden crust. Put the fried fish on a dish and serve immediately.
