The rosy crust not only makes meat and fish dishes more appetizing and tasty, but also keeps them soft and juicy inside. There are several ways to cook crispy fried fish. The most common of these are fish in batter (batter) and fish in breadcrumbs.

Method 1. Fried fish in batter

You will need: – 500 g of frozen fillet of any fish; – 3-4 tablespoons of flour; – salt, pepper to taste; – vegetable oil for deep frying.

For batter: – 1/6 cup wheat flour; 1/6 cup potato starch – 1/2 cup milk or cream; – 1 egg.

Wash previously thawed fish fillets with cold water, dry thoroughly with a paper towel, cut into portions. Season with salt and pepper to taste.

Sift flour for batter into a bowl, mix with potato starch. Gradually pour in the cold milk and stir well to avoid clumping. Whisk the egg in a separate bowl. Combine with dough and mix until smooth.

Pour a large amount of refined vegetable oil into a deep skillet with a thick bottom. Warm up to a temperature of 170–180 ° С.

When there is no special thermometer at hand, it is convenient to check the deep fat temperature with a piece of raw potatoes. Dip it in oil. If a violent boil begins around it and it quickly turns brown, you can start cooking

Dip each piece of fish in flour, dip in batter and deep-fry. Fry for 8-10 minutes until golden brown. Remove with a slotted spoon and place on a tissue to remove excess oil.

Place the fried fish on a platter, drizzle with lemon juice, sprinkle with fresh herbs. Serve with vegetable salad, rice, potatoes.

Method 2. Fried fish, breaded

You will need: – 500 g of frozen fillet of any fish; – 1 egg; – 1/2 glass of milk; – salt, pepper, herbs to taste; – a bag of bread crumbs; – vegetable oil for frying.

Instead of bread crumbs, you can use any flour (wheat, rye, corn, rice, oatmeal). Flour breading forms a more tender crust, which is in perfect harmony with the taste of the product

Whisk the egg, milk, salt, pepper and seasoning in a bowl. Prepare the fish as in the previous recipe. Dip in the milk and egg mixture and let sit for a few minutes.

Pour the breadcrumbs onto the board. Roll chunks of fish evenly in them. Heat a small amount of oil in a heavy-bottomed skillet. Place the fish in a skillet and fry on both sides for 5-7 minutes until golden brown.

Fried fish with a crispy crust works well with sour cream sauce with herbs and garlic, which is very easy to make at home. Mix 100 g sour cream with 1-2 minced garlic cloves, finely chopped fresh herbs, salt and pepper. Add a couple tablespoons of mayonnaise if desired.
