Fried carp: how to cook? Video
Carp is a large river fish, which is considered one of the most delicious for a reason. Its weight can reach several kilograms, so there are not so many small bones in its meat, because of which many do not like river fish. A large carp fried with steaks is a real culinary feast.
What products do you need
To cook delicious fried fish, which you are not ashamed to serve on the festive table, you will need:
- 2,5–3 kg of carp
- 50 g of vegetable oil
- 2-3 medium onions
- 50 g flour or bread crumbs
- 2 tbsp butter
- ground black pepper
- fresh greens
- salt
How to prepare fish for frying
Before frying, the fish must be prepared. Of course, if there is such an opportunity, ask the seller to clean it and immediately chop it into steaks. It will be difficult to do this at home – the bones of the carp’s spine are quite thick. But if you have to butcher it at home, it doesn’t matter either. The scales of this fish are large and easy to clean. Having cleaned from the scales, cut off his head and rip open the abdomen from the anus. Gently remove the insides, being careful not to damage the gallbladder, caviar, if any. Rinse the carcass under running water, cut off the fins with scissors, chop off the tail. Slice the fish across into steaks 1,5–2 cm thick.
Like many types of river fish, carp meat has a slight odor of mud. To get rid of it, soak carp steaks in fresh milk for an hour
Peel the onion, cut it into thin half rings. Pour 2 tablespoons of vegetable oil into a well-heated frying pan, put the onion and fry it. When it turns transparent, add butter to the skillet and continue to fry until golden brown. Then carefully remove the onion from the pan into a separate bowl, and add the remaining vegetable oil to the pan and heat it up.
Pour flour into a shallow bowl, add black pepper and salt to it, as much as you need for the amount of fish you have. Stir in flour, salt and pepper. Dip each steak in flour, put in a pan and fry on both sides, holding it for 2 minutes on each side. Place the fried steaks on a separate plate. If your fish was with caviar, then bread it in flour and fry it too.
When all the steaks are fried, pour the oil from the pan, wash it and place it on the stove. Place the steaks in layers in a skillet, sprinkling with fried onions and finely chopped herbs. Top up with half a glass of hot boiled water, cover the pan with a lid and simmer the fish over medium heat for another 5-6 minutes. You can serve fried carp with mashed potatoes and boiled rice.
