Fresh tuna is a great fish with excellent texture and light but distinct flavor. Cooks love to cook tuna steaks, as it takes little time, and the result, if you follow simple techniques, is always great.
How to choose tuna and prepare it for cooking
Although tuna is a very fatty fish, it dries quickly, so it is important to buy either fresh fish or one that has been packaged in a special airtight container. Depending on the variety, the color of raw tuna ranges from light pink to reddish brown. Sometimes, closer to the tail, the tuna has darker meat, it is edible, but its smell is not so delicate. Usually, tuna goes on sale already chopped into steaks, without the skin. Look for fish that are moist and smell good, without a hint of fish oil.
Take about 150-200 g of fresh tuna per serving
Before cooking, wash the tuna steaks with cool water and pat dry with a paper towel. So that the fish is not dryish, tuna is often marinated for 15 minutes, but sometimes it is left in the marinade for several hours.
The easiest tuna marinade can be made by taking:
- 2 parts soy sauce
- 1 part sesame oil
- 1 part lemon juice
- 1 part orange juice
- 3 tablespoons grated fresh ginger root
How to cook tuna steaks in a skillet
Use a heavy skillet. Pour in 1-2 tablespoons of olive oil, heat the oil over medium heat until a slight smoke comes out of the oil. Lay out the tuna steaks, they should be no thicker than 2-3 centimeters. The fish meat should sizzle slightly when you put it in the pan. Roast the tuna for 6-9 minutes, turning once during roasting. Finished tuna flakes when you touch it with a fork, but remains slightly pink in the middle.
You can fry the tuna and pre-schedule the steaks.
Take:
- 1 egg white
- 5 tablespoons sesame seeds
- 2 teaspoons crushed coriander seeds
Whisk the egg white in a bowl and use a silicone cooking brush to apply it to the surface of the steak. Combine the ground and whole seeds in a bowl, roll the tuna, then roast as described above.
Preheat oven to 220 ° C. Place the tuna steaks on a greased baking sheet, if you haven’t marinated the fish before, brush the tuna with olive oil or melted butter, season with salt and pepper, and bake for 7-10 minutes. In this case, the steaks should not be thicker than 2 centimeters.
Delicious tuna steaks can be served both for lunch and dinner. Keep the finished fish immediately after cooking under a lid or a layer of foil, the meat should “rest”. Because tuna is a versatile fish, it can be served as a main course, with salad and a side dish, or as an addition to pasta. Tuna is often accompanied by various sauces such as garlic aioli, pesto, and fresh tropical fruit sauces.
