Fresh Cucumber Salad Recipe: Summer in the City. Video

Cucumber is the lowest calorie vegetable with a pleasant fresh taste and moderately firm flesh. These properties make it an ideal ingredient for light salads. Supplement them with any vegetables, meat, fish, seafood – fresh cucumbers go well with most salad ingredients.

Spicy fresh cucumber appetizer

This salad should be prepared as a side dish for fried meat. Recipes can be adjusted as needed, such as replacing parsley and cilantro with fresh basil or finely chopped green onions.

You will need: – 3 large fresh cucumbers; – 1 onion; 1/4 cup white vinegar – 1/4 cup boiled water; – 1 teaspoon of salt; – 2 tablespoons of sugar; – 1 hot pepper; – parsley and cilantro.

Wash cucumbers well, dry and cut into thin circles. Chop the onion into thin rings, chop the hot pepper. Place vegetables in a deep bowl. In a bowl, combine water, vinegar, salt and sugar, stir until completely dissolved. Pour the mixture over the vegetables, stir and put in the cold for half an hour.

Finely chop the cilantro and parsley greens. Put the cucumber salad in a vase and sprinkle with herbs. Serve with toasted white or wholegrain bread.

Cucumber salad with dill, garlic and sour cream

You will need: – 3 medium sized cucumbers; – 1/2 cup fresh sour cream; – 1 bunch of dill; – 1/4 lemon; – salt; – freshly ground black pepper.

Peel the cucumbers, remove the seeds and cut into small cubes. Season the cucumbers with salt and let them juice. Place vegetables on a sieve and drain. Place them in a salad bowl. Squeeze the juice from a quarter of a lemon.

In a separate bowl, combine sour cream, salt, freshly ground black pepper and lemon juice. Chop the dill. Sprinkle herbs over the cucumbers and pour the sauce over the salad. Serve immediately as a snack or a side dish with grilled sausages.

You will need: – 1 cucumber; – 1/2 head of romaine lettuce; – 150 g of natural yogurt; – 2 tablespoons of mayonnaise; – 1 tablespoon lemon juice; – salt; – freshly ground black pepper.

Rinse the salad and let the water drain. Dry the leaves with a paper towel. Tear the salad into small pieces and transfer to a bowl. Peel the cucumbers and cut into cubes. Add them to the lettuce leaves.

Instead of romaine lettuce, you can use lettuce

In a separate bowl, combine yogurt, mayonnaise, lemon juice, salt and ground pepper. Stir the sauce well and pour over the salad. Shake the bowl a few times to soak the ingredients well in the sauce.

Cucumber salad with herbs

You will need: – 2 large cucumbers; – 2 hard-boiled eggs; – green onions; – fresh parsley and dill; – 2 cloves of garlic; – watercress; – 2 tablespoons of olive oil; – salt; – freshly ground black pepper.

Grate fresh cucumbers, squeeze with your hands and transfer to a salad bowl. Peel and chop the garlic. Finely chop the boiled eggs, green onions, parsley, dill and watercress. Transfer everything to the cucumbers, top with olive oil, season with salt and freshly ground black pepper and stir.
