Fresh cabbage salad is a light snack that provides the body with fiber and important micronutrients. It can be made even more beneficial by adding fresh lingonberries to the cabbage. The berry will add spicy bitter-sour notes to the salad and greatly decorate the dish.
Cabbage salad with lingonberries and oranges
Try making a light vitamin salad with fresh cabbage and fruits. It is perfect as an appetizer or accompaniment to grilled meat and fish. To make the dish tastier, use young juicy cabbage.
You will need: – 1 small forks of white cabbage; – 1 juicy carrot; – 1 large orange; – 0,5 cups of fresh lingonberries; – a bunch of fresh parsley; – odorless vegetable oil; – salt and sugar to taste.
Remove the top leaves from the cabbage fork, cut the stalk. Chop the cabbage very thinly, put in a bowl, add salt and sugar. Shake the mass well with your hands – this will add juiciness to the salad. Peel the carrots and slice or grate very thinly.
Choose juicy sweet carrots – they will make the dish more delicious.
Peel the orange, divide it into slices, remove the films from them, remove the seeds. Cut the peeled wedges into large pieces. Rinse the lingonberries and discard them in a colander to drain the water. Then dry the berries on a towel. Wash the parsley, pat dry and chop finely.
Place the cabbage in a large transparent salad bowl, add carrots, chopped orange, parsley and lingonberries. Pour vegetable oil over the salad, stir and serve. Serve thinly sliced cereal bread or fresh baguette separately.
