French fries, that is, deep-fried (a thick layer of heated fat), are considered one of the best side dishes for meat or fish. Crispy, appetizing slices of such potatoes are very good both as a stand-alone dish and as an addition to vegetable salads.
Can be made at home with relatively little time and effort. Even an inexperienced cook can easily cope with this task.
If you have a deep fat fryer at home, use it. The easiest way to cook fries at home is using this particular appliance. So the dish will turn out to be fried, tasty and appetizing.
To prepare this dish, you will need the following ingredients: – raw potatoes (calculate their amount based on the number of eaters and their appetite); – vegetable or olive oil; – fine salt; – pepper; – spices to taste; – deep fryer; – paper towel or napkins.
Peel the potatoes. Rinse in cold water and dry thoroughly with a paper towel or tissue. Cut into strips or thin cubes.
Try to keep them the same size for even cooking.
Dry the sliced potatoes again, using a napkin to remove moisture as much as possible. Pour vegetable oil into a deep fryer container, heat to about 160-180 ° C. To determine if the chopped roasting sticks can be used, toss a small piece of potato into the butter. If a fairly strong boil immediately begins around it, the oil is heated to the desired degree.
Place the chopped cubes in a sieve and place them in the heated oil so that all the potatoes are covered with it.
Do not try to fry all the potatoes in one go. It is better to do this in two or three stages so that the cubes are evenly fried and crispy.
How long does it take to cook French fries?
The duration of frying potatoes is, depending on the type of root crop and the thickness of the sliced cubes, from 6 to 8 minutes. When the potato wedges have a golden brown color, the sieve can be removed from the deep fat. Let the oil drain, then place the chips on a paper towel to absorb the excess fat. Then add salt and transfer to a serving bowl.
You can also roast fries at home using a convenience store. There is no need to defrost it. The frying time is the same as in the described recipe, that is, from 6 to 8 minutes.
What is the ratio of the mass of potatoes to mass of fat per roast?
Most culinary guides indicate that potatoes should be taken 8-10 times less, then uniform frying from all sides will be ensured, and the product will be of very high quality. A larger amount of potatoes is allowed, but in any case, its mass should be no more than ¼ of the mass of fat.
Various types of cooking oils are used for deep-frying. However, it is easiest to use vegetable oil at home. If possible, it is better to use a mixture of different types of vegetable oils, then the fat will foam less.
How to cook fries at home without a deep fryer?
You can successfully replace the deep fryer with a cast-iron frying pan, duck or even a cauldron. The main thing is that the dishes you use have high sides and preferably thick-walled. This is necessary to ensure a strong and even heating of the oil. French fries are prepared in the same way as in the previously described recipe, only without using a sieve. Remove the finished potatoes from the boiling oil with a dry slotted spoon. After removing excess grease with a paper towel or napkins, salt to taste and serve.
How to cook fries using a minimum of oil?
Let’s say you have very little oil left. How to cook at home in this case? It couldn’t be easier. The only condition is that you will need to cut the potatoes into very thin cubes (more precisely, into thin strips). Since it will be difficult to do this with a knife, even a very sharp one, use a vegetable shredder with a nozzle that chops into strips.
Place the shredded potatoes on a dry kitchen towel or paper towel to remove excess moisture. Heat vegetable oil in a skillet (2-3 millimeters thick) and add some of the potatoes. Stirring with a dry spoon or a special wooden spatula, fry evenly on all sides. Since the cubes are so thin, it will take a little time to cook, about 2 to 3 minutes. Place the potatoes on a paper towel and add a fresh batch to the butter. And so on, until all the chopped potatoes are fried.
Try to use the finest possible salt for sprinkling your fried potatoes. Better yet, if you grind it into a powder beforehand, then the finished potatoes will be especially tasty. You can also sprinkle the potatoes with black pepper and other spices.
