The Greek approach to cooking frappe

In Greece, there are three degrees of sweetness for frappe:

  1. Glycos (γλυκός, sweet)

2 teaspoons coffee and 4 teaspoons sugar.

  2. Metrios (μέτριος, middle)

2 teaspoons coffee and 2 teaspoons sugar.

  3. Skétos (σκέτος, common)

2 teaspoons of coffee without sugar.

How to serve frappe?

All types can be served with condensed milk, in which case they can be called frapogalos (φραπόγαλο, Greek pronunciation: [fraˈpoɣalo], “frappe-milk”).

Sometimes frappe is served without water (other than the water used in the foam) and milk is used instead. This variant is most often found in Cyprus.

Kahlúa, Baileys Irish Cream, and other coffee liqueurs are sometimes used for additional variation on the drink.
