Flounder is very useful, it contains a large amount of iodine and easily digestible protein. This fish can not only be fried. You can also cook more original dishes from it – for example, bake flounder with seafood and sauce. A spicy addition to sea fish will be white wine, which you can add during the preparation process. It will add an exquisite taste to the dish. And thanks to the sauce, the taste of the flounder will become more intense and delicate.

Flounder with crab meat in herbal sauce: a recipe

To prepare baked flounder with crab meat, you will need the following ingredients: – 150 grams of flounder; – 5 grams of green onions; – 5 grams of parsley; – 10 grams of tarragon; – 10 ml of white wine; – 10 grams of mushrooms; – 10 grams of crab meat; – 80 grams of white sauce; – lemon juice; – a few potato tubers.

To prepare the white sauce, take: – 1 liter of fish broth; – 50 grams of flour; – 50 grams of butter.

Clean the flounder, gut it, and then rinse it under running cold water. Pour wine, broth, finely chopped parsley into a deep frying pan, then stew the fish. Boil the peeled potatoes and mushrooms separately, then chop the crab meat.

Make a white sauce. To do this, melt the butter in a hot frying pan, then add the flour sifted through a sieve and fry it lightly, stirring all the time. Then slowly add the broth, stirring constantly, so that no lumps form. Cook the white sauce for 40-45 minutes. Stir it constantly so that no lumps form and the sauce does not burn. When ready, strain it.

Evaporate the broth left over from stewing the flounder and add the white sauce to it. Let this mixture boil and then strain it. Then bring the mixture to a boil again, add lemon juice, butter and finely chopped tarragon.

Remove the finished flounder from the pan, then place the fish in a large plate with rims. Place the crab meat and mushrooms on top, and place the sliced ​​potatoes on the sides of the fish. Pour the prepared sauce over the flounder and sprinkle with finely chopped green onions.

Flounder stewed with seafood

To prepare flounder with seafood for 4 servings, you will need: – 1600 grams of flounder; – 300 grams of mussels; – 200 grams of small octopuses; – 200 grams of seafood cocktail; – 400 grams of cherry tomatoes; – 300 grams of Napoli sauce; – 200 grams fish broth; – 150 ml of white wine; – Extra Vergine olive oil; – pepper, salt, chili pepper, garlic – to taste.

Peel the skin and entrails of the fish. Fry the flounder meat in a skillet with olive oil. Add mussels, seafood cocktail, small squid to the pan with fish and fry for 2-3 minutes. Add finely chopped garlic and sauté a little.

Then add wine, evaporate it, add broth, Napoli sauce, pepper and salt. Simmer it all until tender. Next, bake the cherry tomatoes in the oven at 190 ° C for 5-6 minutes. Gently place the prepared flounder with seafood on a plate, pour over the sauce and garnish with baked tomatoes.
