Feijoa in our area is an exotic fruit. The taste of the berry is reminiscent of kiwi, strawberries and a little pineapple at the same time. From feijoa you can cook a huge number of the most original dishes. Many make jam out of it, some add it to salads, others add it to pastries and desserts. But there is another proven way to preserve the taste and freshness of the berry for a long time. From it you can make a wonderful tincture. In addition to feijoa, other fresh berries can be added to the drink. For example, this tincture goes well with strawberries or cranberries. But everyone can choose berries to their liking. In this article, we will look at a couple of interesting recipes for making feijoa tincture.
Feijoa tincture recipe
Feijoa tincture on vodka is prepared from the ripest berries. Even slightly overripe fruits will do. The main thing is that they do not have any flaws and damage. Rotten and blackened berries are immediately thrown away. Homemade moonshine (purified), ethyl alcohol (previously diluted), and ordinary vodka from the store are suitable as the basis for the drink. It is very important that these drinks do not have a pronounced smell.
First you need to prepare the following components:
- alcohol (alcohol, moonshine or regular vodka) – half a liter;
- fresh feijoa berries 0,3 kilograms;
- strawberries or fresh cranberries (optional) – no more than 100 grams;
- honey or granulated sugar – from 50 to 150 grams;
- pure water (optional) – from 25 to 100 milliliters.
Additional ingredients can be chosen according to your taste. Keep in mind that cranberries will give the drink a slight pleasant sourness, and fresh strawberries will slightly enhance the taste of the feijoa itself. It is not recommended to add two types of berries to the tincture at once. In this case, it is better to make several tinctures with different tastes.
The required amount of granulated sugar and water, each also determines independently. In this matter, it is better to focus on your own taste and preferences. Most often, sugar is added to the tincture in the third stage, but only half. If necessary, the remaining sugar is dissolved in the drink after the fifth stage (filtration).
The process of making feijoa tincture is somewhat similar to making berry wines:
- Berries must be thoroughly washed under running water. Then the fruits are wiped dry with a paper towel. After that, the fruits are cut into small pieces without removing the peel.
- Additional berries (strawberries or cranberries) should be mashed with a wooden rolling pin. If you are making a tincture without berries, then skip this step.
- The resulting berry mass and chopped feijoa are transferred to a clean glass jar. Immediately after that, vodka is added to the container (it can be replaced with alcohol or moonshine) and granulated sugar. Vodka should cover the berry mass by two or three centimeters. All contents are thoroughly mixed.
- The jar is hermetically sealed with a lid and transferred to an unlit room. You can simply cover the container so that the sun’s rays do not fall on it. The temperature in the room should be room temperature. Shake the container every day. In this form, the tincture should stand for about two or three weeks, but no more. If the drink is overexposed, the taste will become bitter, and the color will turn brown.
- The finished drink should be filtered through any dense cloth or gauze. The berry mass is squeezed well. Now you need to taste the tincture and, if desired, add a little more sugar to it. If the drink turned out to be too strong, then it is diluted with ordinary clean water.
- Next, the tincture is bottled and tightly closed with lids. When adding water or sugar to a drink, you should hold it for another three days to stabilize and only then pour it. Over time, the tincture may become slightly cloudy. In this case, filtration is carried out with cotton wool. It is recommended to store the drink throughout the year indoors without direct sunlight.
