False mushrooms: the dangerous counterpart of the porcini mushroom
White mushroom is one of the most popular forest mushrooms. Various dishes are prepared from it – salted, pickled, soups are cooked, used for making pies, second courses. Experienced mushroom pickers know very well what real porcini mushrooms look like. Novice mushroom pickers need to carefully study the forest mushroom before putting it in their basket.
Look closely at the photo of the false porcini mushroom. It also has two other names – bitterness, or gall mushroom.
The name of the mushroom clearly indicates its bitterness. The toxic substances in the pulp give the mushroom that taste. This characteristic taste becomes even more pronounced during the heat treatment of the mushrooms.
A dish made from a gall mushroom is completely unusable. Even a small piece of such a mushroom can hopelessly spoil it. But the bitterness inherent in bitterness becomes less noticeable when pickling or salting. In this case, the bitter taste is hidden by the use of vinegar and spices. Therefore, most of the intoxications occur when tasting canned false mushrooms, which are crowded among the real porcini mushrooms.
What is the difference between a false porcini mushroom and a real one
To avoid poisoning with the inedible twin of the porcini mushroom, remember its characteristics.
- The spongy substance under the cap is pinkish and has a bitter taste. In a real porcini mushroom, it is white.
- The surface of the leg is covered with a brown mesh.
- The leg of the cut mustard darkens very quickly and takes on a brown color. In the porcini mushroom, it does not change its color.
- Freshly cut bile fungus secretes milky juice.
Outwardly, the ceps’ double is very attractive due to the fact that it has no external damage. And all because insects and animals are afraid to taste it.
The double of the porcini mushroom can cause serious harm to human health: due to the deterioration of bile secretion, the liver suffers and cirrhosis can develop. Therefore, be very careful when going on a quiet hunt. Your health depends only on you!
